Strawberry Cinnamon Muffins

Ingredients
- 2 eggs
- 2/3 cup sugar
- 1/2 cup milk
- 1/4 cup plain yogurt
- 1 teaspoon vanilla
- 1/4 cup butter, melted and cooled
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 1/2 cups strawberries, cut into chunks
Recipe
- 1 in a mixing bowl, whisk the eggs and sugar together until light and frothy.
- 2 add the milk, yogurt, vanilla, and melted butter; whisk gently.
- 3 in another mixing bowl, add the flour, baking powder, salt, and cinnamon.
- 4 add the milk mixture to the dry indgredients; stir just until moistened.
- 5 gently fold in berries.
- 6 spoon batter into greased muffin cups; muffin cups should be 3/4 full.
- 7 bake at 375 degrees for 25 minutes or until pick comes out clean.
- 8 remove muffins from pan and cool on a wire rack.
