Strawberry Cinnamon Muffins

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • 2 eggs
  • 2/3 cup sugar
  • 1/2 cup milk
  • 1/4 cup plain yogurt
  • 1 teaspoon vanilla
  • 1/4 cup butter, melted and cooled
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 1/2 cups strawberries, cut into chunks

Recipe

  • 1 in a mixing bowl, whisk the eggs and sugar together until light and frothy.
  • 2 add the milk, yogurt, vanilla, and melted butter; whisk gently.
  • 3 in another mixing bowl, add the flour, baking powder, salt, and cinnamon.
  • 4 add the milk mixture to the dry indgredients; stir just until moistened.
  • 5 gently fold in berries.
  • 6 spoon batter into greased muffin cups; muffin cups should be 3/4 full.
  • 7 bake at 375 degrees for 25 minutes or until pick comes out clean.
  • 8 remove muffins from pan and cool on a wire rack.
