Spinach-feta Crostini

Total Time: 33 mins Preparation Time: 15 mins Cook Time: 18 mins

Ingredients

  • Servings: 6
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 2 small tomatoes, diced
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup light mayonnaise
  • 1/4 cup light sour cream
  • 1/4 teaspoon pepper
  • 16 ounces french bread, cut into 1/2 inch slices

Recipe

  • 1 mix together all of the ingredients except the bread.
  • 2 (if making ahead, cover and refrigerate until needed.) spread mixture on each slice of bread, place on a baking sheet, and bake at 350 for 18-20 minutes or until golden.
