Spinach And Mushroom Cobb

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 onion, diced
  • 2 cloves garlic, chopped
  • 300 g mushrooms (any mixture you like, sliced)
  • 300 ml sour cream (lite works fine)
  • 2 cups baby spinach
  • 1/2 cup grated cheddar cheese
  • salt & pepper
  • 1 loaf cobb round bread

Recipe

  • 1 slice the top off the cobb.
  • 2 pull out all the soft bread, leaving a shell.
  • 3 in a frying pan, heat the olive oil over a low heat.
  • 4 add the diced onion and garlic and saute gently.
  • 5 add the mushrooms and cook until all the liquid evaporates.
  • 6 add the sour cream and stir through.
  • 7 season with salt and pepper.
  • 8 simmer for a few minutes until it thickens slightly.
  • 9 add spinach and stir through.
  • 10 turn off heat.
  • 11 pour the sour cream mixture into the cobb shell.
  • 12 top with cheese and"lid".
  • 13 tear the soft bready bits into bite size pieces.
  • 14 put the cobb on a baking tray surrounded by bread bits.
  • 15 bake in a moderate (180c) preheated oven for 10-15 minutes until bread is golden and cheese is melted.
