Tangy Apple And Almond Salad

Ingredients

  • Servings: 2
  • 3 large apples
  • 1/2 cup fresh parsley
  • 1/2 cup almonds
  • 2 tablespoons wine vinegar or 2 tablespoons rice wine vinegar
  • 2 tablespoons olive oil
  • 1 lemon
  • 1/4 cup brioche breadcrumbs (optional)

Recipe

  • 1 chop almonds
  • 2 roast almonds gently in a heavy bottom fry pan on medium heat until golden brown.
  • 3 thinly slice the apples.
  • 4 sprinkle with lemon juice as the apple slices are added to the bowl and stir gently.
  • 5 chop parsley very finely and add to apples.
  • 6 drizzle vinegar and olive oil over the top and stir again.
  • 7 finish by sprinkling almonds and breadcrumbs on top.
  • 8 stir before serving.
