Tangy Apple And Almond Salad

Ingredients

- 3 large apples
- 1/2 cup fresh parsley
- 1/2 cup almonds
- 2 tablespoons wine vinegar or 2 tablespoons rice wine vinegar
- 2 tablespoons olive oil
- 1 lemon
- 1/4 cup brioche breadcrumbs (optional)
Recipe
- 1 chop almonds
- 2 roast almonds gently in a heavy bottom fry pan on medium heat until golden brown.
- 3 thinly slice the apples.
- 4 sprinkle with lemon juice as the apple slices are added to the bowl and stir gently.
- 5 chop parsley very finely and add to apples.
- 6 drizzle vinegar and olive oil over the top and stir again.
- 7 finish by sprinkling almonds and breadcrumbs on top.
- 8 stir before serving.
