Twice The Banana Bread

Ingredients
- 1 1/2 cups flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 1 1/2 cups mashed ripe bananas (2-3) or 3 (4 ounce) jars banana baby food
- 1/4 cup oil
- 1/4 cup cold water
- 1 1/2 cups post banana nut crunch cereal
- 1 cup walnuts, chopped (optional)
Recipe
- 1 heat oven to 350 degrees.
- 2 mix flour, sugar, baking powder, baking soda and salt in a large bowl.
- 3 beat eggs in a small bowl.
- 4 stir in the bananas, oil and water.
- 5 add to the dry mixture.
- 6 stir until just moistened (it will be lumpy).
- 7 stir in the cereal and nuts.
- 8 pour into greased 9x5" loaf pan.
- 9 bake 55 to 65 minutes or until toothpick stuck in center, comes out clean.
- 10 cool 10 minutes.
- 11 remove from pan.
- 12 cool completely on wire rack.
