Twice The Banana Bread

Total Time: 1 hr 20 mins Preparation Time: 15 mins Cook Time: 1 hr 5 mins

Ingredients

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 1/2 cups mashed ripe bananas (2-3) or 3 (4 ounce) jars banana baby food
  • 1/4 cup oil
  • 1/4 cup cold water
  • 1 1/2 cups post banana nut crunch cereal
  • 1 cup walnuts, chopped (optional)

Recipe

  • 1 heat oven to 350 degrees.
  • 2 mix flour, sugar, baking powder, baking soda and salt in a large bowl.
  • 3 beat eggs in a small bowl.
  • 4 stir in the bananas, oil and water.
  • 5 add to the dry mixture.
  • 6 stir until just moistened (it will be lumpy).
  • 7 stir in the cereal and nuts.
  • 8 pour into greased 9x5" loaf pan.
  • 9 bake 55 to 65 minutes or until toothpick stuck in center, comes out clean.
  • 10 cool 10 minutes.
  • 11 remove from pan.
  • 12 cool completely on wire rack.
