Sunday Sausage Strata

Ingredients

  • Servings: 12
  • 1/2 lb turkey breakfast sausage, casing removed
  • 2 medium onions, chopped (2 cups)
  • 1 medium red bell pepper, seeded and diced (1 1/2 cups)
  • 12 large eggs
  • 4 cups 1% low-fat milk
  • 1 teaspoon salt, to taste
  • fresh ground pepper
  • 6 cups cubed whole wheat country bread (crusts removed, about 7 slices)
  • 1 tablespoon dijon mustard
  • 1 1/2 cups grated swiss cheese

Recipe

  • 1 coat a 13 x 9 inch baking with cooking spray.
  • 2 cook sausage in a large nonstick skillet over medium heat, crumbling with a wooden spoon, until lightly browned, about 3-4 minutes.
  • 3 transfer to a plate lined with paper towels to drain.
  • 4 add onion and bell pepper to the skillet; cook, stirring often, until softened, 3-4 minutes.
  • 5 whisk eggs, milk, salt, and pepper in a bowl, until blended.
  • 6 spread bread in the prepared baking dish.
  • 7 scatter sausage and the onion mixture evenly over the bread.
  • 8 brush with the mustard.
  • 9 sprinkle with cheese.
  • 10 pour in the egg mixture; cover with plastic wrap and refrigerate for at least 2 hours or overnight.
  • 11 preheat oven to 350°; bake the strata, uncovered, until puffed, lightly browned, and set in the center, 55-65 minutes.
