Spicy Mexican Cornbread

Total Time: 33 mins Preparation Time: 8 mins Cook Time: 25 mins

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 4 tablespoons sugar
  • 4 tablespoons baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil or 1/4 cup bacon grease, if desired
  • 1/2 finely chopped onion
  • 1/2 cup finely chopped jalapeno pepper
  • 1 cup cheddar cheese

Recipe

  • 1 mix all ingredients together in a bowl till smooth.
  • 2 pour in a greased 8x8 or 9x9 pan (square) at 425°f for 20-25 minutes.
