Spicy Lemon Potatoes Sandwich

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 1 (20 ounce) package simply potatoes diced potatoes with onion
  • 4 whole wheat pita bread
  • 1 cup diced fresh carrot
  • 1 cup cauliflower floret
  • 1 cup peas
  • 1 teaspoon cumin seed
  • 1 cup sliced red bell pepper
  • 1/2 cup lemon juice
  • 1/2 cup goat cheese (grated)
  • 1 teaspoon red chili powder
  • 3 tablespoons butter
  • 1 cup chopped tomato
  • 1/2 cup chopped onion
  • salt and pepper

Recipe

  • 1 steam carrots, cauliflower, peas until soft and mash them with a help of potato masher leaving some chunks.
  • 2 in a pan heat butter, add cumin seeds and saute onions.
  • 3 add red bell peppers, tomotoes, steamed vegetables and simply potatoes diced potatoes with onion.
  • 4 cook for 5 mins until it is well blended.
  • 5 now add chilli powder, salt and lemon and cook for another 5 minutes.
  • 6 remove from the flame and garnish with cheese on top.
  • 7 warm the pita bread.
  • 8 use this as a filling in the pita bread.
  • 9 serve hot.
