Ingredients

- 3 cups flour (i use unbleached bread flour)
- 2 cups oats
- 2/3 cup sugar
- 4 -5 tablespoons poppy seeds
- 1/2 teaspoon salt
- 4 teaspoons baking powder
- 1/2 teaspoon baking soda
- 2/3 cup brown sugar
- 2 eggs
- 1/2 cup oil
- 4 teaspoons lemon extract
- 3 teaspoons almond extract
- 2/3 cup brown sugar
- 2 tablespoons butter (melted)
- 2 tablespoons sugar
- 1/2 cup oats
Recipe
- 1 preheat oven to 400 degrees.
- 2 mix first seven ingredients in a large bowl. in another large mixing bowl, combine the wet ingredients, including the brown sugar. mix together being careful not to overmix. pour or spoon into muffin pan.
- 3 sprinkle streusel over muffins.
- 4 cook for 18 minutes (for mini muffins). if using pan with large muffins, cook at 400 degrees for 18 minutes, then lower heat to 330 degrees for an additional 10 minutes.
