Tomato Bread Pudding

Tomato Bread (a.k.a. Mater Bread)

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • Servings: 1
  • 2 slices bread
  • 2 slices cheddar cheese
  • 1 tomato, sliced
  • fresh ground pepper

Recipe

  • 1 place the bread on a plate side by side.
  • 2 place tomato slices to cover both pieces of bread. more cutting down of the slices may be necessary to assure full coverage, but we try not to go in for a full chop. (doesn't bother me to use chopped, but dh prefers slices. either works.).
  • 3 place a slice of cheese on top of each piece of now tomato-covered bread.
  • 4 put both slices in the toaster for 5 minutes (give or take, depending on your toaster. you want the cheese to be melty -- not crispy.).
  • 5 as soon as you take the bread out of the toaster, sprinkle it with fresh ground pepper. this must be done while the cheese is still soft enough for the pepper to melt into.
  • 6 eat like you would a slice of toast. enjoy!

Turkey In A Jam Panini

Ingredients

  • Servings: 2
  • 4 slices sourdough bread (1/2-inch thick)
  • 1 tablespoon butter, melted
  • 2 tablespoons raspberry jam (i use seedless)
  • 2 ounces swiss cheese, thinly sliced
  • 2 ounces deli-sliced turkey
  • 1 cup mixed greens

Recipe

  • 1 preheat panini grill to high.
  • 2 brush one side of each bread slice with butter.
  • 3 place on a work surface, buttered side down, and spread with jam.
  • 4 on bottom halves, evenly layer with cheese, turkey, and greens.
  • 5 cover with top halves and press gently to pack.
  • 6 place sandwiches in grill, close the top plate and cook until golden brown, 3-4 minutes.
  • 7 serve immediately.

Saturday Sourdough Bread

Total Time: 6 hrs 35 mins Preparation Time: 6 hrs Cook Time: 35 mins

Ingredients

  • 2 tablespoons sourdough starter (1 oz)
  • 1/3 cup water (2.25 oz room temperature)
  • 1/2 cup flour (2.25 oz all purposed unbleached flour)
  • 1 1/3 cups water (10.5 oz room temperature)
  • 3 1/2 cups flour (15.75 oz unbleached bread flour)
  • 1 1/2 teaspoons salt (0.4 oz table salt)

Recipe

  • 1 starter sponge: add starter to the water and wisk together. add flour, mix well, cover and let sit at room temperature (70 to 75f) until doubled in volume (6 hours or overnight).
  • 2 dough: wisk starter sponge into the water and add enough flour to make a thin batter. wisk to aerate dough, forming some bubbles. add the rest of the flour and mix well to incorporate.
  • 3 cover the bowl and let rest for 20 minutes.
  • 4 add salt and knead for 8 minutes. cover and let rest 5 minutes.
  • 5 stretch and fold the dough once by stretching dough into a rectangle and folding letter-style side to side and top to bottom.
  • 6 place in oiled container (straight sided is best) and mark the point on the container where the dough is doubled.
  • 7 let rise in 75 to 80 f area for 30 minutes. stretch and fold the dough for the second time.
  • 8 let rise in 75 to 80 f area for 1 more hour or until doubled in volume (3 1/2 to 4 hours).
  • 9 remove dough and divide into 2 pieces weighing just shy of 1 lb each.
  • 10 shape into batards or torpedo or boule (ball) shapes. place loaves on a floured cloth folded to support the sides of each loaf and cover with oiled plastic or in proofing baskets or bowls.
  • 11 at this point, i let rise for 20 - 30 minutes and place in the fridge but you can let the loaves rise until 1 1/2 times their volume and bake.
  • 12 if refrigerated, remove the loaves and let warm in a warm place for about 45 minutes as the oven prehneats to 450°f.
  • 13 add a cast iron skillet near the bottom of the oven to preheat as well.
  • 14 add 1 cup of hot water to the skillet carefully to avoid breaking the oven door glass and score the loaves with a razor blade.
  • 15 transfer the loaves to parchment paper and place in the oven using a flat baking sheet or a peel.
  • 16 bake for 12 minutes and rotate loaves for even cooking. remove steam pan as well.
  • 17 bake for 10 more minutes until browned or 205 f internal temp cool on rack.

Turkey Leftovers Pie

Ingredients

  • Servings: 4
  • 1 lb cooked turkey, leftovers
  • 8 tablespoons bread sauce
  • 9 ounces prepared stuffing, rolled into small balls
  • salt and pepper
  • 1 1/4 cups turkey gravy
  • 2 lbs potatoes, boiled and mashed
  • 3 ounces cheddar cheese, grated

Recipe

  • 1 mix the turkey with the bread sauce and stuffing in a large saucepan and season with salt and pepper. add the gravy and heat through thoroughly.
  • 2 spoon the turkey mixture into a pie dish or gratin dish, top with the mashed potato and sprinkle over the grated cheese.
  • 3 grill until the potato is brown and crispy. serve with baked beans.

Tomato Bites With Dipping Sauce

Ingredients

  • 4 tomatoes
  • 2 cups italian seasoned breadcrumbs
  • 1/4 cup parmesan cheese
  • 2 eggs
  • 1/2 cup milk
  • 1 cup mozzarella cheese, shredded
  • 1 bunch fresh oregano
  • 1 (8 ounce) can tomato sauce
  • 1 garlic clove, pressed

Recipe

  • 1 combine bread crums and parmesan cheese in shallow bowl.
  • 2 combine milk and eggs in a seperate dish.
  • 3 slice tomatoes about 1/4 inch thick.
  • 4 dip tomatoes in milk mixture, then bread crumbs.
  • 5 lay tomato slices on a broiling pan. sprinkle with fresh oregano and mozzarella cheese.
  • 6 broil 2-4 minutes or until cheese is melty and bread crumbs are browned.
  • 7 meanwhile, heat tomato sauce, garlic, and more fresh oregano in a pan over low heat, stirring occassionally.
  • 8 serve tomato bites with dipping sauce, enjoy!

Saturday Morning Biscuit

Ingredients

  • 250 g wine biscuits
  • 1/4 cup sultana
  • 397 g sweetened condensed milk
  • 113 g butter

Recipe

  • 1 melt butter, condensed milk and sultanas together in saucepan over low heat.
  • 2 crush biscuits, add to butter milk mix and mix together well.
  • 3 put mixture in sponge roll tin - greased and lined and bake at 375f, 190c for 20-25 minutes or as required.
  • 4 remove fron tim whilst still warm and remove paper.
  • 5 when cold ice and cut into slices.

Spicy Meatballs With Savoury Jam

Ingredients

  • Servings: 4
  • 500 g ground lamb
  • 1 cup breadcrumbs
  • 1 onion, chopped
  • 1 clove garlic, crushed
  • 1 teaspoon chopped chili
  • 1 teaspoon ground cumin
  • 1 fresh lemon rind
  • olive oil flavored cooking spray
  • 2 onions, sliced
  • 1 red capsicum, seeded and chopped
  • 1 tomato, chopped
  • 1/2 cup red wine vinegar
  • 1/2 cup water
  • 1/2 cup brown sugar

Recipe

  • 1 combine all meatball ingredients, except the oil.
  • 2 mix well and taking about 1 tablespoon of mix, form into balls.
  • 3 place on a foil lined baking tray, and spray with the oil.
  • 4 and bake in a moderate oven for 10 to 15 minutes or until golden brown and cooked through.
  • 5 savoury jam: place all ingredients into a saucepan and slowly bring to the boil, stirring to ensure the sugar dissolves.
  • 6 reduce the heat and simmer for 10 to 15 minutes or until a jam-like consistency is reached.

Tomato Bruschetta, Dijon-style

Ingredients

  • 1/4 cup red wine vinegar
  • 2 tablespoons dijon mustard
  • 1/4 cup extra virgin olive oil
  • 4 large tomatoes, peeled,seeded,and chopped
  • 1/2 cup sliced black olives
  • 1/2 cup sliced green onion
  • 18 -24 slices french baguettes
  • 1 clove garlic, cut in half
  • 2 tablespoons extra virgin olive oil

Recipe

  • 1 in a mixing bowl, add the vinegar and mustard; whisk to blend.
  • 2 slowly whisk in the 1/4 cup olive oil.
  • 3 add in the tomatoes, olives, and green onions; toss to coat.
  • 4 cover and refrigerate for 30 minutes.
  • 5 toast the bread slices; rub one side of each bread slice with the cut side of the garlic clove and drizzle with olive oil.
  • 6 top the bread slices with the tomato mixture.
  • 7 serve.

  • 1 place all ingredients in 10-inch skillet on low heat.

Sugar Free Pumpkin Date Nut Bread

Ingredients

  • 29 ounces pumpkin
  • 4 cups splenda sugar substitute
  • 2 eggs
  • 1/2 cup oil
  • 1/2 cup applesauce
  • 1 tablespoon cocoa
  • 1 teaspoon vanilla
  • 4 cups whole wheat flour
  • 1 cup flour
  • 4 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 2 cups chopped dates
  • 2 cups chopped nuts

Recipe

  • 1 in large mixing bowl, whip eggs.
  • 2 add oil and continue mixing.
  • 3 add the splenda sugar substitute and mix well.
  • 4 add the applesauce, pumpkin, and vanilla.
  • 5 sift together the dry ingredients and add to the pumpkin mixture.
  • 6 stir in the dates and nuts.
  • 7 batter will be very stiff.
  • 8 grease and flour 8 small loaf pans or 4 larger loaf pans.
  • 9 bake in a preheated 350 degree oven for 1 hour or until toothpick inserted in center of loaf comes out clean.
  • 10 remove from pans and cool on wire rack.
  • 11 when completely cool, store in plastic bags.
  • 12 this bread freezes nicely and is a great thanksgiving gift to friends.

Turkey Kofta Kebabs

  • 500 g ground turkey (turkey mince)
  • 1 onion, diced
  • 1 garlic clove (minced or chopped)
  • 1 teaspoon hungarian paprika
  • 20 g breadcrumbs (a handful)

Recipe

  • 1 mix all the ingredients in a bowl, best to use hands to get everything through.
  • 2 shape the mix into kebab shapes around skewers.
  • 3 cover in clingfilm and pop in the fridge for 30 minutes.
  • 4 place on a medium grill for 15 minutes (or till cooked depending on thickness of kebabs).

Tomato Casserole

Ingredients

  • Servings: 6
  • 2 (14 1/2 ounce) cans whole tomatoes, drained and coarsly chopped
  • 1 1/2 cups bread, cubes (soft, 3-4 slices)
  • 1/4 cup butter, melted
  • 1/4 cup brown sugar, firmly packed
  • 1/4 teaspoon pepper

Recipe

  • 1 stir all ingredients together. spoon into a lightly greased 9-inch baking dish.
  • 2 bake at 400 for 35 to 40 minutes.

Robin's Fruited Scones

Ingredients

  • 3/4 cup dried fruit, i like welch's berry medley best
  • 2 cups unbleached all-purpose flour
  • 3 tablespoons sugar
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 5 tablespoons cold butter
  • 1 cup sour cream
  • 2 egg yolks
  • you can add a dash of mccormicks orange peel and a few grates of fresh nutmeg to the batter
  • 1 egg
  • 1 teaspoon sugar
  • 1/8 teaspoon cinnamon

Recipe

  • 1 chop the larger pieces of dried fruit and set aside. combine flour, sugar, baking powder,salt and baking soda in a bowl. cut in butter till mixture resembles coarse crumbs. mix together egg yolks and sour cream. reserve your whites for the glaze/topping. add sourcream mixture to dry ingredients. stir in dried fruit and mix just till combined. turn onto floured surface and knead gently 6-8 times with well floured hands. pat out into a circle or rectangle about half inch thick. cut a circle like a pie and will give you larger traditional shaped scones. for more smaller scones i cut the rectangle into strips then cut each strip into small triangles. you can either brush with egg and sprinkle cinnamon suger over tops at this point and then transfer to pan. or i transfer to ungreased baking sheets and then brush on egg and sprinkle cinnamon and sugar on. bake at 425 for 15-20 minutes, or golden brown. ajust time for size scones made. will rise as bake so give space between on pan. best served fresh and warm from the oven with devonshire cream and rasberry preserves. but even next day are still light and tender. do not over work mixing and kneeding the dough or will get dense and dry.

Southern Fried Green Tomatoes

Ingredients

  • Servings: 6
  • 3 medium unpeeled firm green tomatoes
  • salt
  • pepper
  • 1/4-1/3 cup milk
  • 1/2 cup all-purpose flour
  • 2 beaten eggs
  • 3/4 cup fine dry breadcrumb
  • 1/4 cup cooking oil

Recipe

  • 1 cut tomatoes into ½ inch thick slices.
  • 2 sprinkle both sides of each slice with salt and pepper.
  • 3 dip slices into milk then in flour.
  • 4 dip into eggs then into breadcrumbs.
  • 5 in a 10-inch skillet cook half of the slices at a time in hot oil over medium heat for 8-10 minutes on each sides or till brown.
  • 6 (if tomatoes begin to brown too quickly, reduce heat to medium-low).
  • 7 add more oil, if needed.
  • 8 season to taste with salt and pepper.

Spicy Mediteraniam Bread

Ingredients

  • Servings: 4
  • 1 baguette
  • 2 cups tomato bruschetta topping
  • 1 jalapeno pepper, sliced (fresh or jarred)
  • 1/2 cup feta cheese (broken up in small pieces)
  • 1 -2 cup mozzarella cheese (sliced or shredded)

Recipe

  • 1 cut baguette length wise, and put a generous amount of bruchetta on bread, layer with jalapeno peppers and crumbled fetta, top off with mozzarella.
  • 2 bake on a baking sheet in a preheated oven of 425°f until cheese is melted well and heated through.
  • 3 *note: measurements are approximate and to your liking.

Spicy Mexican Bean Burger

Ingredients

  • 1 (16 ounce) can fat-free refried beans (these are always vegan)
  • 1 teaspoon oil
  • 1/2 cup small onion, coarsely chopped
  • 1/2 green pepper, coarsely chopped
  • 1/4-1/2 cup frozen corn
  • 1 carrot, peeled and shredded
  • 1/8 cup picante sauce (spicy or mild to your taste) or 1/8 cup salsa (spicy or mild to your taste)
  • 1 cup breadcrumbs
  • 1/2 cup flour
  • 1 teaspoon black pepper, to taste
  • salt
  • 1 dash chili powder
  • 1 dash cumin
  • 1/2 cup sliced black olives (optional)
  • hot sauce, a few drops per burger (optional)

Recipe

  • 1 heat oil in skillet over medium heat.
  • 2 add onions, carrots, corn and chopped green pepper.
  • 3 in the meantime, place beans in a large bowl.
  • 4 sauté until vegetables are bright in color.
  • 5 add vegetables to beans, blend with hand mixer.
  • 6 add remaining ingredients, adding more flour to create a firmer mixture, or more salsa if mixture is too stiff.
  • 7 form into balls and smash into patties.
  • 8 place on pieces of waxed paper and stack in tupperware.
  • 9 place about 5 sliced olives in middle of patty, smash to seal them inside.
  • 10 to heat, spray each burger with cooking spray.
  • 11 heat over medium heat and cook until browned on one side.
  • 12 flip and drop a few drops of hot sauce on burger if desired.
  • 13 i serve these with salsa, chopped onions and a cheese slice on a toasted burger bun (toast the face in the same skillet used for the burger).

Turkey Jack Appetizers (mini Monte Cristos)

Ingredients

  • 8 ounces thinly sliced ham
  • 8 ounces thinly sliced turkey
  • 8 ounces thinly sliced monterey jack cheese
  • 16 slices egg bread (or wheat)
  • oil (for frying)
  • 4 eggs, lightly beaten
  • 3/4 cup milk
  • 2 tablespoons flour
  • powdered sugar
  • sour cream
  • raspberry preserves

Recipe

  • 1 evenly divide the ham, turkey and jack cheese among 8 slices of bread.
  • 2 top with remaining 8 slices of bread, making 8 sandwiches.
  • 3 cut each sandwiches into four squares or triangles.
  • 4 in a shallow dish combine eggs, milk and flour. beat well.
  • 5 heat oil to 375º in large skillet to about 1/2 inch depth.
  • 6 fry sandwiches, a few at a time, about 1 minute each side, until golden brown.
  • 7 drain on paper towels.
  • 8 dust with powdered sugar and serve with sides of sour cream and preserves.

Spicy Mexican Cornbread

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 4 tablespoons sugar
  • 4 tablespoons baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil or 1/4 cup bacon grease, if desired
  • 1/2 finely chopped onion
  • 1/2 cup finely chopped jalapeno pepper
  • 1 cup cheddar cheese

Recipe

  • 1 mix all ingredients together in a bowl till smooth.
  • 2 pour in a greased 8x8 or 9x9 pan (square) at 425°f for 20-25 minutes.

Saturday Strata

Ingredients

  • 1 1/4 lbs sourdough bread, sliced 1/2 (1 11/4 lb.)
  • 8 ounces cream cheese, cubed
  • 1/2 lb mozzarella cheese, grated
  • 3/4 cup pesto sauce
  • 6 ounces prosciutto, thinly sliced
  • 1 lb tomato, thinly sliced
  • 5 eggs
  • 1 1/2 cups half-and-half
  • 1/2 teaspoon table salt
  • fresh ground black pepper

Recipe

  • 1 arrange and layer with first 6 ingredients.
  • 2 coat a 2–3-quart round baking dish with nonstick spray.
  • 3 arrange half the bread slices on the bottom of the dish. top with half of each of the cream cheese, mozzarella, pesto, prosciutto, and tomatoes. finish layering with the remaining ingredients.
  • 4 whisk eggs, milk, salt, and pepper. pour the mixture over the layers; cover and chill for at least 2 hours, or as long as overnight. remove from the refrigerator 20–30 minutes before baking. bake the strata at 350° until puffed, golden brown, and lightly set in the center, about 1 hour. allow the strata to rest for 10 minutes before unmolding.

  • 5 tomatoes, about 2 pounds, peeled, halved, cored and seeded
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar

  • 1/2 baguette, cut into 3/4 inch cubes (about 4 cups)
  • 4 tablespoons butter, melted
  • 1/4 cup parmesan cheese, grated

Recipe

  • 1 position a rack in the center of the oven and preheat to 400 degrees. grease a 1 1/2 quart shallow casserole dish.
  • 2 using a food processor, pulse the tomato halves, salt, sugar and a pinch of pepper until coarsely pureed.
  • 3 place the bread cubes in the prepared dish and pour in the melted butter to coat. top with the tomato puree and gently mix to distribute.
  • 4 bake until crusty and golden brown, about 30 minutes. sprinkle the cheese on top and bake for 10 minutes more. let cool 5 minutes before serving.

Turkey Kebabs

Ingredients

  • Servings: 4
  • 1 lb ground turkey
  • 1/4 cup breadcrumbs
  • 1 bunch scallion, half finely chopped, half cut into 1-inch pieces
  • 1/4 cup soy sauce
  • 1/4 cup sesame seeds
  • 1/3 cup carbonated lemon-lime beverage
  • 1 tablespoon sesame oil
  • 2 teaspoons grated fresh ginger
  • 1 teaspoon garlic powder
  • 1 large asian pear, cored and cut into 8 wedges

Recipe

  • 1 in a medium bowl, combine the turkey, bread crumbs, chopped scallions and 1 tablespoon soy sauce. form into 16 meatballs; transfer to a large plate and sprinkle with the sesame seeds.
  • 2 in a small bowl, whisk together the remaining 3 tablespoons soy sauce, the lemon-lime soda, sesame oil, ginger and garlic powder.
  • 3 transfer half of the mixture to another small bowl for serving.
  • 4 preheat the grill to medium. thread the turkey meatballs, scallion pieces and asian pear wedges onto skewers.
  • 5 grill, turning occasionally and basting with the soy mixture, until the kebabs are browned, 10 to 12 minutes. serve with the reserved sauce for dipping.

  • 2 cups light mayonnaise

Recipe

  • 1 chop turkey ham into cubes.
  • 2 place cubes into food processor and mince.
  • 3 combine all ingredients.
  • 4 serve on favorite bread or with crackers.

Thalhimers' Spoon Bread

  • 1 preheat oven to 350.
  • 2 pour margarine into 8" square baking pan.

  • 7 beat with a wire whisk until smooth.
  • 8 pour into prepared pan.
  • 9 bake in preheated oven until firm and golden brown, 30-35 minutes.

Tomato Bread (tapas)

  • 4 slices french bread
  • 2 ripe tomatoes, halved
  • 1 garlic clove, finely chopped (optional)
  • 2 tablespoons spanish olive oil (optional)

  • 1 for soft bread, toast first by placing under a preheated broiler until lightly golden on both sides.
  • 2 rub each slice of bread with half a fresh juicy tomato.
  • 3 optionally, sprinkle chopped garlic over slices and drizzle with oil.

Recipe

  • 1 add the ingredients (except for the sugar cubes and cinnamon) into your bread machine according to manufacturer's directions.
  • 2 in the meantime, in a clean and dry plastic bag combine the sugar cubes and ground cinnamon. using the flat side of a mallet, crush the sugar cube mixture to a coarse powder. **warning**: you want the sugar cubes to be no larger than 1/16" in diameter or you could run the risk of jamming the bread machine mechanism if the chunks are too big.

  • 1 lb premium lump crabmeat, drained
  • 1 tablespoon freshly-squeezed lemon juice
  • 1 tablespoon ginger, finely minced
  • 5 green onions, chopped
  • 1/2 red bell pepper, finely minced
  • 2 garlic cloves, finely minced
  • 1 tablespoon vegetable oil
  • 1 teaspoon crushed red pepper flakes
  • 2 tablespoons fresh parsley, chopped
  • 3 tablespoons mayonnaise
  • 1 egg, beaten
  • 1 cup fresh breadcrumb, finely crushed (or panko)
  • sweet chili sauce (thai kitchen brand)

  • 4 eggs, beaten
  • 2 1/2 cups milk (any kind)
  • 1/4 teaspoon black pepper
  • 1 1/2 teaspoons any combination dried herbs (sage, thyme, marjoram, oregano all work well if using fresh herbs, use at least 1 tbs.)

Recipe

  • 1 place 3 cups of bread cubes in the bottom of a greased bundt pan.
  • 2 place turkey evenly over bread. spread swiss cheese over turkey. sprinkle with sauted onions or leeks. top with remaining 3 cups of bread cubes.
  • 3 combine beaten eggs with milk and seasonings and pour over the mixture in the pan. place bundt pan in a pan of water; i use a 9" x 13" pan for this. bake at 350 degrees for one hour.
  • 4 remove from water pan and cook and additional 10 minutes, or until a knife comes out clean.
  • 5 cool for ten minutes. use a plastic spatula to carefully lift turkey mixture away from the pan. invert onto a platter.

Tomato Cantonese Lamb Chops

  • 1/2 cup half-and-half cream or 1/2 cup milk
  • 1/2 cup fine dry breadcrumb
  • 1/2 cup flour

  • 1/4-1/3 cup oil
  • 1 medium onion
  • 1 tablespoon oil
  • 1 tablespoon cornstarch
  • 1/4 cup cold water
  • 1 (14 ounce) can whole tomatoes, quartered (with juice)
  • 2 tablespoons ketchup
  • 1 tablespoon h.p. steak sauce
  • 2 tablespoons honey or 2 tablespoons brown sugar

Recipe

  • 1 mix together bread crumbs, flour, salt, pepper and garlic powder (if using).
  • 2 dip chops into half and half cream (or milk if using).
  • 3 then coat the lamb chops in the flour/bread crumb mixture.
  • 4 brown in oil over medium heat; drain oil, and set the chops in a greased shallow casserole dish.
  • 5 to make the sauce: slice the onion in half lengthwise, and then slice finely to form half rings.
  • 6 brown the onion in oil.
  • 7 in a small bowl/cup mix the cornstarch with water.
  • 8 add in the cornstarch mixture and the tomatoes, with the remaining ingredients; mix to combine with a wooden spoon, and bring to a boil.
  • 9 pour over the lamb chops in the baking dish.
  • 10 cover with foil and bake in a 325°f oven for about 30 minutes.

Robin Hood Oatmeal Raisin Bread (abm)

  • 1 (29 ounce) can tomato sauce or 1 (29 ounce) can tomato puree
  • 2 (29 ounce) cans diced tomatoes
  • 4 tablespoons ketchup (i free pour it)
  • 4 tablespoons hp steak sauce, americans can use spicy steak sauce (a1 not recommended, i freepour it)
  • 1/4 cup brown sugar (adjust for sweetness desired)
  • 1 tablespoon cornstarch
  • 1/4 cup cold water

Recipe

  • 1 mix flour, breadcrumbs, salt and pepper in a shallow dish.
  • 2 dip chops into milk, then into mixture of breadcrumbs, flour, salt and pepper.
  • 3 coat well.
  • 4 fry in oil over medium heat until chops are browned. add more oil as needed to cook the coating on chops, otherwise the chops will have spots from the flour.
  • 5 drain and set aside.
  • 6 to make sauce: cut onion in half lengthwise and slice finely to form half rings.
  • 7 brown in oil and drippings from browning chops.
  • 8 add tomatoes and all remaining ingredients except cornstarch and water.
  • 9 taste as it simmers and add more ketchup, hp sauce or brown sugar to taste.
  • 10 bring to boil and add cornstarch/water mixture, stirring well until the sauce thickens just a little bit.
  • 11 spray 9 x 13 casserole with non-stick spray.
  • 12 pour enough sauce into casserole just to cover the bottom.
  • 13 add half the chops.
  • 14 pour enough sauce to cover the chops.
  • 15 add remaining chops and cover with remainder of sauce.
  • 16 cover and bake at 350 for 45 minutes or until sauce is bubbly.
  • 17 with these measurements, you get alot of sauce and will have leftovers. if you have too much sauce, let it cool, put in a freezer container or ziploc bag and freeze. alternatively, you can 1/2 the sauce recipe.
  • 18 it freezes very well.

Southern Italian Baby Artichokes.

  • 12 baby artichokes
  • 2 lemons
  • 4 mashed garlic cloves
  • 1/2 cup italian seasoned breadcrumbs
  • salt
  • black pepper
  • extra virgin olive oil (lots)

Recipe

  • 1 juice 1 lemon into large bowl filled with cold water. add remnant lemon also.
  • 2 set bowl of water next to prep area.
  • 3 juice 1 more lemon set juice aside.
  • 4 take each artichoke and remove top few layers of dark green leaves exsposing slightly lighter more tender leaves underneath.
  • 5 snap off artichoke long stems.
  • 6 with kitchen shears cut up 1/2 inch of the top of artichoke. add to lemon water, otherwise they will darken.
  • 7 boil enough water to cover artichokes with second lemon juice.
  • 8 once boiling add artichokes for 10 minutes.
  • 9 preheat oven to 400°f.
  • 10 strain and pat dry.
  • 11 in metal pot, large enough to hold artichokes snuggly heat 1 tblsp oil and 4 cloves of mashed garlic over low to medium heat, allow to become tender.
  • 12 set artichokes stem side down into pot, make sure they are snug.
  • 13 add enough olive oil to reach halfway up artichokes.
  • 14 bake uncovered for 15-20 minutes. ( leaves should pull away fairly easily when done).
  • 15 once cooked discard most of oil, leave enough to toss to coat and season generously with pepper and salt add 1 handful 1/2 cup of italian bread crumbs.

Southern Fried Biscuits

  • 4 cups milk
  • 1/2 cup water
  • 4 tablespoons sugar
  • 2 1/2 tablespoons active dry yeast (2 2/3 packages)
  • 1/2 cup shortening
  • 6 teaspoons salt
  • 7 -9 cups flour
  • apple butter

Recipe

  • 1 dissolve yeast in warm water.
  • 2 add and combine sugar, shortening and salt.
  • 3 add flour until mixture has a good dough consistency.
  • 4 knead for 5 minutes and let rise until about 1 1/2 times.
  • 5 (45 min) don't let it rise to high.
  • 6 roll out and cut into biscuits.
  • 7 (alternatively, you can form into biscuits prior to rising and freeze individually. don't allow them to rise to high when defrosting) heat oil in deep fryer to about 355 degrees but no hotter or biscuits will come out with a soggy center.
  • 8 (note use fresh oil as biscuits will take on flavor of other foods that may have been cooked in the oil otherwise) drop biscuits in oil and fry for 8 to 10 minutes.
  • 9 they should be medium brown and done through.
  • 10 do not crowd too many biscuits in the oil at one time.

  • 1 (8 ounce) container soft cream cheese
  • 1/3 cup grated parmesan cheese

  • 4 large plum tomatoes, thinly sliced (can use less)

Recipe

  • 1 microwave the the cream cheese in a medium microwave-safe bowl on high for 20 seconds; add in the parmesan cheese, garlic and basil; mix well to combine, then season with salt and pepper to taste.
  • 2 slice the bread in half lengthwise.
  • 3 evenly divide and spread the mixture over the cut sides of the bread.

  • 6 combine breadcrumbs, turkey and vegetables in a large bowl.

Spicy Mid-eastern Lamb Patties

  • 1 lb ground lamb
  • 1 egg, beaten
  • 1/2 cup breadcrumbs
  • 1/2 teaspoon coriander
  • 1/2 teaspoon cardamom

  • 1/4 teaspoon cayenne (or more)

  • 2 teaspoons fresh lemon juice

  • 3 spray the bottom of the crock pot with non-stick spray.

  • 1 heat oven to 350. stir together oil, basil, garlic, salt and pepper in small bowl.
  • 2 place bread slices on ungreased baking sheet. brush top of each slice of bread with oil mixture.

  • 4 heat broiler. top each slice of bread with 1 slice cheese and 1 slice tomato, brush with remaining oil mixture.
  • 5 broil 5 to 6 inches from heat until cheese begins to melt (1 to 2 minutes).

  • 1 lb , shelled fresh frozen or 1 lb dried field peas
  • 10 cups water
  • 4 ounces salt lamb, bacon or 4 ounces a small ham hocks
  • 1 dried whole red chili pepper (optional)
  • 2 tablespoons bacon drippings
  • 2 cups onions, chopped
  • 1 large garlic clove, smashed
  • 1 teaspoon kosher salt (to taste)
  • 1/4 freshly cracked black pepper
  • 1 lb fresh green beans
  • 1 tablespoon bacon drippings (optional) or 1 tablespoon butter (optional)
  • 1 teaspoon granulated sugar
  • 1 teaspoon herbes de provence (optional)

  • 1 rinse field peas and place into a large pot or dutch oven. if preparing from dried, presoaked peas, cover with water, add salt lamb, bacon or ham hock, and chile pod, if using. bring to a boil, reduce heat and simmer uncovered, at a bare bubble for 1 hour.
  • 2 heat bacon drippings in a separate skillet and add the onion. cook for about 4 minutes, or until tender but not browned. add garlic and seasonings; cook and stir another minute. transfer to pea pot. rinse, trim and snap green beans in half or thirds, depending on their size. add to pot, bring peas to a boil, reduce and simmer over a medium low heat, until peas are tender, another 25-30 minutes.
  • 3 if preparing from fresh or frozen, place everything into the pot all at once and cook for approximately 30 minutes, or until beans and peas are tender.
  • 4 add butter or bacon fat and stir in; taste and adjust seasonings as needed. serve as a side dish. also excellent with grilled andouille sausage and cornbread.
