Spring Morning Casserole

Ingredients

- 2 cups cut fresh asparagus (1-inch pieces)
- 1 small red sweet bell pepper, chopped
- 1 small onion, chopped
- 3 tablespoons butter
- 8 cups cubed day old french bread
- 1 cup cubed cooked ham
- 2 cups shredded cheddar cheese
- 8 eggs, beaten
- 2 cups 2% low-fat milk
- 1/3 cup honey
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Recipe
- 1 in a large skillet, saute the asparagus, red bell pepper, and onion in butter until tender; set aside.
- 2 place bread in a greased 13 x 9 inch baking dish.
- 3 layer with ham, 1 cup cheese, and vegetable mixture.
- 4 sprinkle with remaining cheese.
- 5 in a large bowl, combine the eggs, milk, honey, salt, and pepper.

- 8 remove from refrigerator 30 minutes before baking.
- 9 bake, uncovered, at 350° for 40-45 minutes or until a knife inserted in the center comes out clean.
