Squash Casserole With Pimento

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 3 tablespoons butter
  • 1 cup milk
  • 1 cup dry breadcrumbs
  • 2 cups cooked squash, mashed
  • 1 tablespoon grated onion
  • 1 teaspoon salt
  • fresh ground pepper
  • 2 eggs
  • 1/2 cup buttered bread crumb, for topping
  • 1 tablespoon minced pimentos

Recipe

  • 1 preheat oven to 350.
  • 2 melt butter in hot milk and pour over the bread crumbs. mix well and add squash, onion, pimento and seasonings.
  • 3 beat eggs and add to squash mixture.
  • 4 pour into a greased 2-quart casserole and cover with buttered bread crumbs.
  • 5 bake 20 to 30 minutes.
