Squash Casserole With Pimento

Ingredients

- 3 tablespoons butter
- 1 cup milk
- 1 cup dry breadcrumbs
- 2 cups cooked squash, mashed
- 1 tablespoon grated onion
- 1 teaspoon salt
- fresh ground pepper
- 2 eggs
- 1/2 cup buttered bread crumb, for topping
- 1 tablespoon minced pimentos
Recipe
- 1 preheat oven to 350.
- 2 melt butter in hot milk and pour over the bread crumbs. mix well and add squash, onion, pimento and seasonings.
- 3 beat eggs and add to squash mixture.
- 4 pour into a greased 2-quart casserole and cover with buttered bread crumbs.
- 5 bake 20 to 30 minutes.
