Rum-laced Caribbean Cornbread

Total Time: 1 hr Preparation Time: 10 mins Cook Time: 50 mins

Ingredients

  • Servings: 8
  • 1 1/2 cups milk
  • 1/2 cup butter, melted and cooled
  • 2 tablespoons rum or 1 1/2 teaspoons rum extract
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 cup yellow cornmeal
  • 1/2 cup sugar
  • 1/3 cup flaked coconut
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 grease an 8" square pan.
  • 3 combine the milk, butter, rum and eggs in a large bowl; whisk until well mixed.
  • 4 add in remaining ingredients; stir just until moistened.
  • 5 spread in the greased pan.
  • 6 bake 45-50 minutes, or until done.
  • 7 serve warm or at room temperature.
