Sausage And Cheese Egg Bake

Ingredients
- 8 slices sourdough bread (cut into 1/2 - 1 inch cubes)
- 1 1/2 cups cheddar cheese (grated. any other cheese may be substituted.)
- 10 -14 large eggs
- 2 cups milk
- 2 teaspoons dry mustard
- 1/8 teaspoon salt
- 1/8 teaspoon pepper (more or less as desired)
- 2/3 cup diced onion (saute onions until translucent or bit more as desired)
- 3/4 lb breakfast sausage (cook sausage separately, then drain and crumble. any preferred sausage may be substituted.)
- 1/8 ounce nonstick cooking spray
Recipe
- 1 cook sausage then drain, crumble or thinly slice, then set aside.
- 2 saute onions and other desired vegetables if any, and set aside. the first two steps can be done ahead of time and refrigerated until needed.
- 3 preheat oven to 350 degrees f.
- 4 spray 13" x 9" glass pan with cooking spray.
- 5 cover the bottom of the pan with the cubed sourdough bread.
- 6 layer 1/2 of the grated cheese on top of the bread.
- 7 layer sauteed onions (and other vegetables) on top of the cheese.
- 8 layer crumbled sausage on top of the onions.
- 9 layer the remaining cheese over the sausage.
- 10 beat together the eggs, milk, dry mustard, pinch of salt, pepper to taste, and then pour over everything in the pan.
- 11 bake for 40 - 50 minutes until center is firm and top slightly browned.
