Sausage Stuffed Potatoes

Ingredients

- 8 medium potatoes
- 3/4 lb sweet italian sausage or 3/4 lb hot italian sausage
- 2 slices bread, soaked in water and squeezed dry
- 3 tablespoons butter, divided
- 1 tablespoon choppped parsley
- 1 tablespoon stock
- 1 egg yolk
- 1/4 teaspoon salt
- 1/4 teaspoon pepper (omit if hot sausage is used)
Recipe
- 1 preheat oven to 400°f.
- 2 without peeling potatoes, boil for 10 minutes. drain and peel. using teaspoon, scoop out a deep hole for stuffing.
- 3 in medium bowl, add skinned sausage, bread, 1 tablespoon of the butter, parsley, stock and egg yolk. mix together well and carefully stuff into potatoes.
- 4 assemble potatoes in greased baking dish, dot with butter, sprinkle with salt and pepper and bake 15 minutes.
- 5 serve hot.
