Sausage Stuffed Potatoes

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 8 medium potatoes
  • 3/4 lb sweet italian sausage or 3/4 lb hot italian sausage
  • 2 slices bread, soaked in water and squeezed dry
  • 3 tablespoons butter, divided
  • 1 tablespoon choppped parsley
  • 1 tablespoon stock
  • 1 egg yolk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper (omit if hot sausage is used)

Recipe

  • 1 preheat oven to 400°f.
  • 2 without peeling potatoes, boil for 10 minutes. drain and peel. using teaspoon, scoop out a deep hole for stuffing.
  • 3 in medium bowl, add skinned sausage, bread, 1 tablespoon of the butter, parsley, stock and egg yolk. mix together well and carefully stuff into potatoes.
  • 4 assemble potatoes in greased baking dish, dot with butter, sprinkle with salt and pepper and bake 15 minutes.
  • 5 serve hot.
