Ingredients
- Servings: 1
- 1 medium garlic clove, minced (to taste)
- 1/2 teaspoon salt, to taste
- 1 teaspoon fresh black pepper, to taste
- 1 -2 teaspoon fresh lemon juice
- 3 tablespoons extra virgin olive oil
- 2 large solar cooked eggs, chopped
- 1/2 tablespoon flat leaf parsley, chopped (to taste)
- 2 slices bread
Recipe
- 1 combine garlic, salt, pepper, and lemon juice in a small bowl. stir together.
- 2 add olive oil. continue to mix until well-combined.
- 3 add eggs and parsley into the bowl of dressing. fold all ingredients together carefully.
- 4 adjust seasonings to your taste.
- 5 spread egg salad on one slice of bread & take another slice of bread to place on top.
- 6 slice sandwich in half and serve.
