Spice Kickin' Cast Iron Cornbread!

Ingredients

- 1 cup cornmeal
- 1 cup flour
- 1/4 cup sugar
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1 tablespoon red pepper flakes
- 1 teaspoon cayenne pepper
- 1 teaspoon pepper
- 1/8 teaspoon cinnamon
- 1 cup milk
- 1 egg, beaten
- 1/4 cup vegetable oil
- 1/2 cup chopped crisped bacon
- 1 green onion, chopped
- 1/2 jalapeno, chopped very fine
- 6 -8 tablespoons bacon grease, for pan (it really is a key ingredient)
Recipe
- 1 heat your oven to 425°, grease your cast iron pan well with bacon grease, and put the pan into the oven to get hot.
- 2 in a large mixing bowl, mix all your dry ingredients.
- 3 add cooked bacon, green onion, jalapeno, mix well.
- 4 then add the milk, egg, and vegetable oil.
- 5 carefully pour the mixture into the pan, and cook for 20 minutes.
