Spice Kickin' Cast Iron Cornbread!

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 cup cornmeal
  • 1 cup flour
  • 1/4 cup sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon red pepper flakes
  • 1 teaspoon cayenne pepper
  • 1 teaspoon pepper
  • 1/8 teaspoon cinnamon
  • 1 cup milk
  • 1 egg, beaten
  • 1/4 cup vegetable oil
  • 1/2 cup chopped crisped bacon
  • 1 green onion, chopped
  • 1/2 jalapeno, chopped very fine
  • 6 -8 tablespoons bacon grease, for pan (it really is a key ingredient)

Recipe

  • 1 heat your oven to 425°, grease your cast iron pan well with bacon grease, and put the pan into the oven to get hot.
  • 2 in a large mixing bowl, mix all your dry ingredients.
  • 3 add cooked bacon, green onion, jalapeno, mix well.
  • 4 then add the milk, egg, and vegetable oil.
  • 5 carefully pour the mixture into the pan, and cook for 20 minutes.
