Squash Casserole

Total Time: 1 hr 30 mins Preparation Time: 25 mins Cook Time: 1 hr 5 mins

Ingredients

  • Servings: 8
  • 3 lbs yellow squash
  • 1/2 cup onion, chopped
  • 2 eggs
  • 1/2 cup margarine or 1/2 cup butter
  • 1/2 cup vigo breadcrumbs
  • 1 -4 tablespoon sugar, to taste
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt

Recipe

  • 1 cut squash and onion.
  • 2 boil together until tender.
  • 3 drain well.
  • 4 mash.
  • 5 add eggs, salt, pepper, sugar, and half the margarine/butter.
  • 6 pour mixture into baking dish.
  • 7 melt remaining margarine/butter and put on top of mixture.
  • 8 cover with bread crumbs and bake at 375 degrees until brown (about 1 hour).
