Stuffed Mushroom Appetizers

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 8
  • 1 lb fresh button mushroom, medium sized
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped green bell pepper
  • 3 tablespoons butter
  • 1 1/2 cups soft breadcrumbs
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground turmeric (optional)
  • 1/4 teaspoon pepper
  • 1 tablespoon butter

Recipe

  • 1 wash and dry mushrooms.
  • 2 remove stems and chop fine to measure 1/3 cup.
  • 3 in small frying pan, saute chopped mushroom stems, onion and green pepper in 3 tbl. butter til soft.
  • 4 remove from heat and stir in rest of ingredients except whole mushroom caps.
  • 5 stuff mushroom caps with filling.
  • 6 melt 1 tbl. butter.
  • 7 pour butter into shallow baking dish.
  • 8 place mushrooms in baking dish.
  • 9 bake 15 minutes in 350º oven.
  • 10 raise oven temp to broil.
  • 11 broil, 3-4" from heat.
  • 12 broil 1-2 minutes.
  • 13 serve hot.
  • 14 *you don't have to broil these if you prefer not to.
