Stuffed Mushroom Appetizers

Ingredients
- Servings: 8
- 1 lb fresh button mushroom, medium sized
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped green bell pepper
- 3 tablespoons butter
- 1 1/2 cups soft breadcrumbs
- 1/2 teaspoon salt
- 1/2 teaspoon dried thyme
- 1/2 teaspoon ground turmeric (optional)
- 1/4 teaspoon pepper
- 1 tablespoon butter
Recipe
- 1 wash and dry mushrooms.
- 2 remove stems and chop fine to measure 1/3 cup.
- 3 in small frying pan, saute chopped mushroom stems, onion and green pepper in 3 tbl. butter til soft.
- 4 remove from heat and stir in rest of ingredients except whole mushroom caps.
- 5 stuff mushroom caps with filling.
- 6 melt 1 tbl. butter.
- 7 pour butter into shallow baking dish.
- 8 place mushrooms in baking dish.
- 9 bake 15 minutes in 350º oven.
- 10 raise oven temp to broil.
- 11 broil, 3-4" from heat.
- 12 broil 1-2 minutes.
- 13 serve hot.
- 14 *you don't have to broil these if you prefer not to.
