Stuffed Strawberry Muffins

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 8
  • 1 2/3 cups flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 3/4 cup milk
  • 1 egg, beaten
  • 1/3 cup butter, melted
  • 1/4 cup strawberry jam

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 combine dry ingredients in a medium bowl.
  • 3 combine milk, egg and butter.
  • 4 gently stir wet ingredients into the dry ingredients until moistened.
  • 5 spoon batter into greased pans (reserving 1/2 cup for topping).
  • 6 put 1 teaspoon of strawberry jam into each muffin.
  • 7 spoon remaining batter on top of the jam and bake for 15 to 20 minutes.
  • 8 remove muffins and cool on wire rack.
