Souffle Rarebit

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 4 slices bread, crusts removed
  • 4 ounces caerphilly cheese or 4 ounces lancashire cheese or 4 ounces french cantal cheese or 4 ounces english cheddar cheese
  • 4 eggs, separated
  • 4 teaspoons milk
  • salt and pepper

Recipe

  • 1 preheat oven to 350f.
  • 2 toast bread on one side.
  • 3 slice cheese and place on the untoasted sides of the bread.
  • 4 beat egg yolks with mil, salt and pepper.
  • 5 whisk egg whites until very still then fold egg yolks into them.
  • 6 pile on top of cheese slices.
  • 7 bake for 10 to 15 minutes until well risen and golden brown.
  • 8 serve immediately.
