Spice Bread Or Muffins

Ingredients
- 1/2 cup butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/3 cup cinnamon applesauce
- 1 tablespoon flax seed meal
- 3 tablespoons wheat germ
- 2 eggs
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1 pinch nutmeg (or more to taste)
- 1/2 teaspoon pumpkin pie spice
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup flour
- 3/4 cup whole wheat flour
- 1 cup pumpkin
- 1/2 cup reduced-fat sour cream or 1/2 cup yogurt
- 2/3 cup walnuts, chopped
Recipe
- 1 cream together the butter and sugars. add the applesauce, eggs, vanilla, spices, flax seed meal and wheat germ- mix well. mix together the flour, baking soda and salt. add to wet ingredients just till mixed. stir in pumpkin, sour cream and nuts.
- 2 spoon into large greased muffin tins or a bundt pan. this will make 12 large muffins or a full bundt pan.
- 3 cook bread for 50-60 min and muffins for 25-30. be sure to check for doneness with a toothpick.
