Spinach, Olive Cheese Pastries

Ingredients

  • 400 g spinach or 400 g silver beet
  • 1 1/2 cups low-fat ricotta
  • 1/2 cup sliced black olives
  • 1/2 cup parsley, chopped
  • pepper
  • sea salt, to taste
  • 6 pieces mountain bread or 6 pieces flat bread
  • olive oil flavored cooking spray
  • sesame seeds

Recipe

  • 1 wilt the spinach and squeeze any moisture out.
  • 2 combine with ricotta, olives, herbs and seasoning.
  • 3 preheat oven to 180°c.
  • 4 spray the bread with a little water to make it pliable. spoon a little of the spinach mixture along the bottom of the bread, leaving some room at the sides. fold the sides in and then roll up.
  • 5 spray with oil and sprinkle with sesame seeds.
  • 6 spray a baking tray with oil and arrange the parcels, covering with foil. bake for 20 minutes.
  • 7 remove foil and bake another 5-10 minutes until the tops are golden.
