Ingredients

- 1 cup self-rising yellow cornmeal
- 3 eggs
- 2 cups milk
- 1 tablespoon sugar
- 1 cup water
- 3 tablespoons shortening
Recipe
- 1 scald milk and pour over meal; add cold water.
- 2 mix in sugar, shortening, and beaten egg yolks.
- 3 fold in stiffly beaten egg whites just before baking.
- 4 pour into a well-greased, hot baking dish, (about 1 quart).
- 5 bake 40 minutes in a hot oven, 400°f.
