Tomato-crowned Cod

Total Time: 28 mins Preparation Time: 10 mins Cook Time: 18 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs cod fish fillets
  • 2 tablespoons lemon juice
  • 1/8 teaspoon pepper
  • 2 large tomatoes, sliced 1/4 inch thick
  • 1/2 medium sweet green pepper, finely chopped
  • 2 tablespoons finely chopped onions
  • 1/4 cup dry breadcrumbs
  • 1 tablespoon chopped fresh basil or 1/2 teaspoon dry basil, crumbled
  • 1 tablespoon oil

Recipe

  • 1 arrange fillets in single layer in lightly oiled baking dish.
  • 2 sprinkle with lemon juice and pepper.
  • 3 place tomato slices on fish.
  • 4 sprinkle with green pepper and onion.
  • 5 combine bread crumbs, basil and oil in bowl; spread bread crumb mixture evenly over tomatoes.
  • 6 bake in preheated 350 degree oven for 18 to 20 minutes or until fish flakes when pierced with fork.
