Tomato-crowned Cod

Ingredients
- Servings: 4
- 1 1/2 lbs cod fish fillets
- 2 tablespoons lemon juice
- 1/8 teaspoon pepper
- 2 large tomatoes, sliced 1/4 inch thick
- 1/2 medium sweet green pepper, finely chopped
- 2 tablespoons finely chopped onions
- 1/4 cup dry breadcrumbs
- 1 tablespoon chopped fresh basil or 1/2 teaspoon dry basil, crumbled
- 1 tablespoon oil
Recipe
- 1 arrange fillets in single layer in lightly oiled baking dish.
- 2 sprinkle with lemon juice and pepper.
- 3 place tomato slices on fish.
- 4 sprinkle with green pepper and onion.
- 5 combine bread crumbs, basil and oil in bowl; spread bread crumb mixture evenly over tomatoes.
- 6 bake in preheated 350 degree oven for 18 to 20 minutes or until fish flakes when pierced with fork.
