Too Good To Be Good For U-- Turkey Meatloaf

Ingredients

  • Servings: 8
  • 1 1/4 lbs ground turkey breast
  • 4 slices whole wheat bread, soaked in
  • 1/4 cup water
  • 2 egg whites
  • 1/2 large onion, chopped
  • 2 stalks scallions, medium chopped
  • 1 jalapeno pepper, seeded and chopped
  • 1/2 red bell pepper, finely chopped
  • 1 small carrot, finely chopped
  • 1/4 cup ketchup
  • 1 tablespoon seasoning salt (e.g. lawry's brand)
  • 1 tablespoon gravy master seasoning and browning sauce
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3/4 cup ketchup
  • 2 tablespoons honey or 2 tablespoons brown sugar
  • 1 1/2 tablespoons balsamic vinegar or 1 1/2 tablespoons apple cider vinegar
  • 1 dash tabasco sauce (optional)

Recipe

  • 1 in a large bowl, thoroughly combine the ground turkey, soaked bread and egg whites.
  • 2 add all remaining ingredients to the turkey mixture (except those listed for the sauce) and combine with your hands or a mixing spoon.
  • 3 bake uncovered in a greased loafpan at approximately 400 degrees for 1 hour and 15 minutes.
  • 4 combine all the ingredients for the sauce in a bowl.
  • 5 spread sauce on top of meatloaf and bake for an additional 20 minutes at 350 degrees.
