Uncle Bill's Drunken Beans

Total Time: 4 hrs 25 mins Preparation Time: 25 mins Cook Time: 4 hrs

Ingredients

  • 6 cups dry mixed beans (i use a 5 bean mix)
  • 3 -4 tablespoons oil (i use extra virgin olive oil)
  • 6 large onions, chopped into large chunks
  • 12 stalks celery, chopped
  • 2 large bell peppers
  • 4 cups ham, chopped (i use leftover ham from the freezer)
  • 3 tablespoons garlic, chopped finely
  • 1 tablespoon parsley, chopped (i like to use cilantro)
  • salt and pepper
  • 3 cups jack daniels whiskey
  • 1 (8 ounce) can beer
  • water, lots and lots water

Recipe

  • 1 soak the beans overnight.
  • 2 in large (and i do mean large) heavy kettle add the oil over medium flame till hot. add the onions, celery, bell pepper and garlic. saute till the onion is slightly browned but not to flimsy. add the ham, and allow to absorb some of the flavor.
  • 3 drain the beans, and add to the pot. add cilantro, salt and pepper, jack daniels, and beer, then fill the remainder with water to cover the beans and about 4 inches above the beans.
  • 4 as the beans cook, be sure to stir often and when liquid seems to get low, add more booze,whatever you or someone else is drinking throw it inches making sure to cook at least 4 to 6 hours and that these beans are good and drunk to the point of being totally blasted. do not add any more booze at least 1/2 hour prior to serving unless you wanna be blasted too.
  • 5 we serve these the night we do prime rib on the big bbq, bbq'ed and deep fried turkey, garlic bread, and cole slaw.
