Spice Muffins - Bad As You Wanna Be

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 12
  • 1 cup water
  • 1 cup raisins
  • 1/2 cup shortening
  • 1 cup granulated sugar
  • 1 egg
  • 1 3/4 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon clove
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup walnuts (optional)
  • 1 cup packed brown sugar
  • 1/3 cup half-and-half
  • 1/4 teaspoon salt
  • 3 tablespoons butter
  • 1 teaspoon vanilla
  • 2 cups confectioners' sugar
  • coarsly chopped walnuts (optional)

Recipe

  • 1 preheat oven to 350 degrees. grease 12 muffin cups.
  • 2 combine water and raisins in a saucepan; simmer 10 minutes. set aside; do not drain.
  • 3 cream shortening and sugar. add egg and raisins and reserved liquid. combine dry ingredients and add to creamed mixture; mix well.
  • 4 stir in walnuts, using.
  • 5 divide batter among prepared muffin cups.
  • 6 bake 20-25 minutes or until muffins test done by inserting a toothpick that comes out clean.
  • 7 cool 10 minutes, remove from pan and cool completely on a rack.
  • 8 to make frosting:
  • 9 combine brown sugar, half and half and salt in a sauce pan.
  • 10 bring to a boil over low heat and stir until smooth,.
  • 11 stir in butter and vanilla.
  • 12 remove from heat, cool slightly.
  • 13 stir in confectioners' sugar.
  • 14 frost muffins; top with nuts, if desired.
