Spelt (wheat-free) Popovers

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 3/4 cup warm water
  • 1 tablespoon yeast
  • 3 tablespoons sugar
  • 1/4 cup butter, softened, but not melted
  • 1 egg
  • 1 1/4 cups spelt flour
  • 3/4 cup tapioca flour
  • 1 tablespoon xanthan gum

Recipe

  • 1 in a large bowl, whisk in the yeast to the warm water and stir well. let it sit for about 3 minutes.
  • 2 add the sugar and with an electric beater, mix well. add the softened butter and egg and using the mixer continue to stir.
  • 3 add the flours and xanthum gum. stir in the flour well with a spatula. the dough should be a little bit thicker than a muffin batter, but not as stiff as a bread dough. if it is too dry, add a little more water so thin it out some.
  • 4 grease a muffin pan (or a popover pan if you have one) with some buttered flavor pan spray.
  • 5 with a ice cream scooper, scoop out into individual muffin cups.
  • 6 bake for about 15-18 minutes at 350 degrees.
  • 7 allow to cool for a few minutes before serving. serve warm.

The Ultimate Leftover Ham Sandwich * Christmas/easter *

Ingredients

  • Servings: 1
  • 2 -3 slices honey-baked ham, as much as desired
  • 2 slices bread (i prefer a wheat and grain like poulsbo for this)
  • mayonnaise, to taste (optional)
  • mustard, to taste
  • cream cheese, to taste
  • 2 -3 ounces apple pie filling, to taste (drunken apples - like famous dave's is my preference or applesauce could be subbed if you have no sliced baked apples)
  • 2 -3 ounces baked beans, to taste (lightly smashed so they stay on if desired, dad's recipe preferred)
  • 1 -2 slice cheddar cheese
  • 2 -3 slices tomatoes
  • 2 leaves romaine lettuce (or preferred lettuce as desired) (optional)
  • 2 -3 ounces mashed potatoes, to taste
  • 2 -3 tablespoons ham gravy, to moisten potatoes if desired (optional)

Recipe

  • 1 on one slice of bread mix a bit of mayo (if used) and mustard to lightly cover bread.
  • 2 layer ham, baked beans, cheddar, mashed potatoes and spoon desired amount of gravy (if desired to moisten) then spoon a small amount of cinnamon apples on top (although order isn't terribly important).
  • 3 top with tomato and lettuce.
  • 4 spread cream cheese on final piece of bread.
  • 5 enjoy (grab a napkin and maybe a fork in case it gets messy!) ;).

Triple Treat Chocolate Muffins

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • 90 g butter, melted
  • 2 1/2 cups self rising flour
  • 1/2 cup cocoa
  • 3/4 cup sugar
  • 1 egg
  • 1 1/3 cups milk
  • 3/4 cup chopped chocolate
  • 1/2 cup chopped milk chocolate

Recipe

  • 1 preheat oven to 190c oven.
  • 2 grease a 12 hole muffin pan (1/3 cup capacity).
  • 3 combine all ingredients in a large bowl, stir with large metal spoon until just combined.
  • 4 spoon mixture into prepared pan.
  • 5 bake 190c oven for about 25 minutes.
  • 6 cool on a wire rack.

Spelt And Linseed Soda Bread

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 250 g wholemeal spelt flour
  • 200 g plain flour
  • 50 g linseeds
  • 1 teaspoon sea salt
  • 1 teaspoon bicarbonate of soda
  • 400 ml buttermilk

Recipe

  • 1 preheat the oven to 190 degrees.
  • 2 in a big bowl mix the dry ingredients together with a fork, lifting a little high to get some air into it.
  • 3 (did you know that the most used ingredient in cooking is air?).
  • 4 make a well in the centre and add most of the buttermilk or substitute ;-).
  • 5 continue mixing with the fork until the dough comes together and is soft but not sticky.
  • 6 add more milk if it's getting to dry or if to sticky add a little more flour.
  • 7 with floured hands lift out the dough onto a floured surface and shape into a round. do not kneed the dough to much or you will get a hockey puck.
  • 8 use your fairy hands for this, lightly lightly makes the dough rise high :-).
  • 9 transfer onto a lightly floured baking sheet and with a sharp knife cut a cross along the top to let the fairys out while baking. then bake at 190 degrees for 30 minutes.
  • 10 leave to rest and cool on a wire rack.

Spelt Blueberry Muffins With Struesel Topping

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 1 egg
  • 1/2 cup milk
  • 1/4 cup oil
  • 1 cup spelt flour
  • 1/2 cup whole spelt flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup blueberries (i use fresh blueberries, but if you use frozen, donãƒæ’ t thaw them)
  • 1/3 cup brown sugar (packed)
  • 1/4 cup flour
  • 1/2 teaspoon cinnamon

Recipe

  • 1 heat oven to 400 degrees. grease bottom of 12 medium muffin cups (or use cupcake papers). beat egg and stir in milk and oil. mix in dry ingredients just until moistened. (if you prefer, you can use all spelt flour). fold in fresh or frozen blueberries.
  • 2 fill muffin cups 2/3 full (i use an ice cream scoop). top with streusel topping (recipe follows). bake 20 – 25 minutes. allow to cool for 5 to 10 minutes before removing from pans.
  • 3 streusal topping : mix….
  • 4 brown sugar, flour, cinnamon.
  • 5 add 3 tablespoons of cut-up firm butter and mix until crumbly. for me, the best way to mix this is to just dig in and use my hands.

Super Quick Pizza Dough

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 1 (1/4 ounce) package yeast
  • 1 cup water
  • 1 tablespoon oil
  • 2 1/2 cups all-purpose flour

Recipe

  • 1 mix yeast in warm water until dissolved.
  • 2 stir in oil and flour until it forms a dough ball.
  • 3 cover bowl with a kitchen towel, place on top of your stove while the oven is warming up.
  • 4 let rise for 15 minutes.
  • 5 spread on pizza pan, jelly roll pan or baking stone (i've used them all).
  • 6 top with your favorite sauce, meats, veggies, herbs and/or cheeses!

Spelt Sunshine Muffins

Total Time: 35 mins Preparation Time: 35 mins

Ingredients

  • Servings: 8
  • 1 cup flour (half spelt, half whole spelt)
  • 1 teaspoon baking soda
  • 1 teaspoon cornstarch
  • 1 teaspoon cinnamon
  • 1/2 teaspoon sea salt
  • 1/2 cup orange juice (juice of one orange)
  • 3 tablespoons orange zest (zest of one orange)
  • 1 cup carrot (shredded)
  • 1/4 cup sunflower seeds
  • 1/4 cup shredded coconut
  • 1/2 cup maple syrup
  • 1 1/2 teaspoons vegan egg substitute

Recipe

  • 1 preheat oven to 375.
  • 2 heat muffin tin in the oven while you mix the ingredients.
  • 3 for best results, mix wet and dry ingredients seperately before combining.
  • 4 when combinind ingredients, do so as lightly as possible.
  • 5 if room allows, leave one muffin tin empty and fill with a few tablespoons of water.
  • 6 bake muffins for approximately 20 minutes, depending on size of muffins and strength of oven.

Triple Seed Bread (abm)

Ingredients

  • 1 1/3 cups water
  • 1 1/2 teaspoons salt
  • 2 tablespoons vegetable oil
  • 3 tablespoons honey
  • 1 1/3 cups whole wheat flour
  • 2 cups bread flour
  • 1/3 cup dry buttermilk
  • 1/3 cup pumpkin seeds
  • 1/3 cup raw sunflower seeds
  • 1/3 cup sesame seeds
  • 1 teaspoon instant yeast

Recipe

  • 1 place all ingredients in machine in order recommended by the manufacturer. select basic cycle.

Super Sandwiches For Kid's Parties

Total Time: 15 mins Preparation Time: 15 mins

Ingredients

  • 8 slices bread (very soft sliced bread with the crusts cut off)
  • 8 slices brown bread (very soft sliced bread with the crusts cut off)
  • butter (tastes better than margarine but make sure you soften it first)
  • ketchup (can use reduced sugar version)
  • mayonnaise (a good quality one with whole eggs)
  • 8 slices ham (lean, can be smoked)
  • 8 slices gouda cheese (can use other yellow cheese but please not processed cheese slices!)

Recipe

  • 1 generously butter the bread slices and arrange on your bench so that each sandwich has one slice and one slice brown bread.
  • 2 spread the mayonnaise on the buttered bread making sure to get right to the edges of the slice so that the ends don't get dry.
  • 3 place a slice of cheese over the mayonnaise.
  • 4 spread ketchup thinly over the brown slice, again making sure you go to the edges and then cover with a slice of ham.
  • 5 place the two pieces together, then press gently down on a cutting board and slice diagonally twice so that you have 4 triangular pieces.
  • 6 continue with the other slices until you have 32 pieces which you arrange points facing up on a platter.
  • 7 cover with cling film and chill for 2-3 hours before needed.
  • 8 decorate the platter with chips scattered over if you like.

Spelt Bread For Baking In The Oven

Ingredients

  • 1 tablespoon active dry yeast
  • 1 cup warm water
  • 2 tablespoons honey
  • 2 tablespoons safflower oil
  • 1 teaspoon salt
  • 3 1/2 cups spelt flour

Recipe

  • 1 preheat oven 350 degrees.
  • 2 dissolve yeast in water with honey and oil. add salt and 1 1/2 cups spelt flour.
  • 3 beat well for 3-4 minutes.
  • 4 cover with damp cloth and let rest in warm place for approsimately 30 minutes or until double in size.
  • 5 add remaining flour, turning onto floured board to knead.
  • 6 knead until smooth, adding flour if necessary.
  • 7 place in oiled loaf pan and cover with damp cloth.
  • 8 let rise in warm place until doulbe in size (approximately 30 minutes).
  • 9 bake for 30-40 minutes or until golden brown.

Triple-cheese Torta

Ingredients

  • 2 (8 ounce) packages cream cheese, softened
  • 4 ounces gruyere (1 cup) or 4 ounces swiss cheese, finely shredded (1 cup)
  • 2 ounces blue cheese (1/2 cup) or 2 ounces feta cheese, crumbled (1/2 cup)
  • 1 tablespoon olive oil
  • 1 small red onion, cut in thin wedges (3/4 cup)
  • 1 1/2 cups quartered cherry tomatoes
  • 2 tablespoons balsamic vinegar or 2 tablespoons wine vinegar
  • 2 garlic cloves, minced
  • 1 tablespoon snipped fresh tarragon or 1 teaspoon dried tarragon, crushed
  • 1 medium granny smith apples (1 cup) or 1 medium other tart apple, cored and chopped (1 cup)
  • 1/3 cup chopped green onion
  • 1 tablespoon lemon juice
  • 2 teaspoons minced jalapeno peppers
  • 1 teaspoon sugar

Recipe

  • 1 let cheeses stand at room temperature for 30 minutes. in a large food processor or mixing bowl combine cream cheese, gruyere cheese, and blue cheese. process or beat until well combined.
  • 2 line one 7-1/2x3-1/2x2-inch loaf pan or a 3-quart bowl with plastic wrap.
  • 3 for skillet roasted tomato topper, spread half the cheese mixture in pan or bowl; spoon half the topper over cheese. cover and refrigerate remaining topper. carefully spoon on remaining cheese mixture and spread evenly. cover and chill for 2 to 24 hours.
  • 4 for apple-jalapeno topper, spread cheese mixture in loaf pan or bowl; cover and chill 2 to 24 hours.
  • 5 to serve, unmold cheese onto a serving platter, removing plastic wrap. top with remaining topper. (if making apple-onion topper, sprinkle with 1/4 cup pistachio nuts, if desired.) serve cheese appetizers with crackers, flatbreads, fresh vegetables, or fruits. makes 24 (2-tablespoon) servings.
  • 6 skillet roasted tomato topper: in a skillet heat 1 tablespoon olive oil over medium-high heat. add 1 small red onion cut in thin wedges (3/4 cup). cook, stirring occasionally, until lightly browned. add 1-1/2 cups quartered cherry tomatoes; 2 tablespoons balsamic or wine vinegar; 2 cloves garlic, minced; and 1 tablespoon snipped fresh tarragon or 1 teaspoon dried tarragon, crushed. simmer, uncovered, until most of the liquid is evaporated. remove from heat; cool slightly.
  • 7 apple-jalapeno topper: combine 1 medium granny smith or other tart apple, cored and chopped (1 cup); 1/3 cup chopped green onions; 1 tablespoon lemon juice; 2 teaspoons minced jalapeno pepper; and 1 teaspoon sugar.

Strawberry Papaya Nut Bread

  • 1/2 cup extra virgin coconut oil or 1/2 cup butter
  • 1 cup brown sugar
  • 1 teaspoon baking soda
  • 1 cup chopped fresh strawberries
  • 1 cup mashed ripe papaya
  • 2 eggs, i use brown
  • 2 cups flour
  • 1/4 teaspoon salt
  • 1/2 cup walnuts
  • cinnamon, for sprinkling (optional)

Recipe

  • 1 mix oil/butter and prefered sugar.
  • 2 mix in remaining ingredients.
  • 3 pour into loaf pan.
  • 4 bake at 350 for 40-50 minutes or until cake tester comes out clean, 1/2 way through baking add cinnamon on top for crystalized sweetness.

Spelt Bread

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • 2 tablespoons yeast
  • 3/4 cup warm water
  • 2 2/3 cups warm water
  • 1/4 cup honey
  • 1 tablespoon salt
  • 9 tablespoons oil
  • 9 cups spelt flour

Recipe

  • 1 in a cup, combine 3/4 cup of warm water, 1/4 cup of honey and 2 tbsp of yeast. set aside.
  • 2 in a large bowl, combine 2 2/3 cup of warm water, salt and oil.
  • 3 add half flour and yeast mixture.
  • 4 stir well.
  • 5 add remaining flour and knead for about 8 to 10 minutes.
  • 6 preheat oven to 200 degrees and then turn off.
  • 7 grease an ovenproof bowl and place dough in it. let rise in oven. punch dough down.
  • 8 divide into three, place into three greased loaf pans, poke holes in loaves and let rise again.
  • 9 bake 425 degrees for 20-25 minutes.

The Ultimate Spicy Grilled Cheese

Total Time: 9 mins Preparation Time: 2 mins Cook Time: 7 mins

Ingredients

  • 4 slices thick bread (texas toast works great)
  • 8 slices monterey jack pepper cheese
  • 4 slices fresh mozzarella cheese
  • butter
  • onion, and (optional)
  • tomato (optional)

Recipe

  • 1 butter both sides of each slice of bread.
  • 2 heat a frying pan to medium heat.
  • 3 place 2 slices of bread in the pan and top each with 2 slices of pepperjack 1 slice of mozzerella and tomatos and onions.
  • 4 cook each side until golden brown and cheese is melted.

Spelt Loaf

Ingredients

  • 7 g dry yeast (sachet)
  • 1 tablespoon caster sugar
  • 1 1/2 cups warm water
  • 1 1/2 cups spelt flour (wholemeal specified)
  • 1 1/2 cups spelt flour ( specified)
  • 1 teaspoon sea salt
  • 2 tablespoons linseeds
  • 2 tablespoons oats (traditional rolled not instant)
  • 1 tablespoon olive oil
  • 2 teaspoons milk
  • butter (to serve)
  • jam (to serve)

Recipe

  • 1 place yeast, sugar and warm water in a jug and whisk with a fork to dissolve yeast and then stand in a warm place for 10 minutes or until frothy.
  • 2 sift flours into a large bowl and stir in sal, 1 1/2 tablespoons linseeds, 1 tablespoon rolled oats, yeast mixture and olive oil.
  • 3 mix for form a soft dough and then turn out onto a lightly floured surface and knead for 5 minutes or until smooth and elastic (see note in intro).
  • 4 place in a large, lightly greased bowl and cover and set aside in a warm place for 1 hour or until doubled in size.
  • 5 preheat oven to 200c (180c fan forced).
  • 6 lightly grease 6cm deep, 10cm x 20cm (base measurement) loaf pan.
  • 7 combine remaining linseeds and oats in a small bowl and set aside.
  • 8 using your fist, punch dough down and then knead until smooth and then shape into a 22cm log and place in prepared pan .
  • 9 cover lightly with greased plastic wrap and set aside in a warm place for 30 to 40 minutes or until dough has almost doubled in size.
  • 10 brush top with milk and sprinkle with linseed mixture and bake for 30 to 35 minutes or until dark golden and hollow sounding when tapped.
  • 11 turn onto a wire rack to cool.
  • 12 serve with butter and jam.

The Ultimate Croque Monsieur - Baked French Bistro Sandwich

Total Time: 40 mins Preparation Time: 5 mins Cook Time: 35 mins

Ingredients

  • 2 tablespoons unsalted butter
  • 1 garlic clove, minced
  • 3 tablespoons onions, finely chopped
  • 2 tablespoons all-purpose flour
  • 1 cup hot half-and-half cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon nutmeg
  • 2 teaspoons pastis
  • 8 ounces gruyere cheese, grated (divided use)
  • 1/3 cup fromage blanc or 1/3 cup mascarpone cheese
  • 1/4 cup grated parmesan cheese
  • 8 thick slices country french bread, crusts removed
  • 4 teaspoons dijon mustard
  • 6 ounces applewood-smoked ham, thinly sliced
  • fresh thyme sprig, for garnish
  • 4 tart little french cornichons, for garnish

Recipe

  • 1 preheat the oven to 4oo degrees f.
  • 2 to make bechamel soubise sauce --.
  • 3 in a medium saucepan, melt the butter and sweat the garlic and onions over low heat for 15 minutes, stirring often.
  • 4 add the flour all at once, whisking with a wooden spoon for 2 minutes. stir in the hot cream and cook, whisking constantly, for 5 minutes or until sauce is thickened.
  • 5 remove from heat and stir in the salt. pepper, nutmeg, pastis, 1/4 cup grated gruyere, fromage blanc, and the parmesan; set aside.
  • 6 to toast the bread, place the slices on a baking sheet and bake for 5 minutes, turn and bake for another 3 minutes, until toasted.
  • 7 to assemble the sandwiches --.
  • 8 brush dijon mustard evenly on one side of half the toasted bread slices. add a slice of ham to each, sprinkle with half the remaining gruyere. top with another slice of toasted bread. slather the tops with the cheese sauce, and sprinkle with the remaining gruyere.
  • 9 bake for 5 minutes at 400 degrees f. turn on the broiler and broil for 3 to 5 minutes, until cheese topping is nicely caramelized. (you want the outside to be crusty and golden brown, and the inside soft and pudding-like).
  • 10 serve hot, garnished with a thyme sprig and a tart little cornichon pickle on the side. variation: for a "croque madame", serve with a fried or poached egg on top (the egg resembles a ladies hat).

Savory Spinach, Feta, And Roasted Red Pepper Muffins

Ingredients

  • nonstick vegetable cooking spray
  • 2 3/4 cups all-purpose flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon paprika
  • 3/4 teaspoon salt
  • 3/4 cup whole milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup thinly sliced spinach leaves
  • 3/4 cup crumbled feta cheese
  • 1/2 cup chopped sweet roasted red pepper (see recipe description)

Recipe

  • 1 preheat oven to 375°f
  • 2 spray 12 standard (1/3-cup) muffin cups with nonstick spray.
  • 3 whisk flour, sugar, baking powder, paprika, and salt in medium bowl. whisk milk, oil, and eggs in large bowl to blend. add dry ingredients; whisk just until blended. add spinach, feta, and peppers; fold to incorporate evenly.
  • 4 divide batter among prepared muffin cups.
  • 5 bake muffins until tester inserted into center comes out clean, 25 to 28 minutes for standard muffins
  • 6 cool 5 minutes. run knife around muffins to release from pan. invert pan to release muffins, then turn muffins right side up and cool completely.

Strawberry Orange Muffins

Ingredients

  • 2 1/4 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup sugar
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 tablespoon orange zest
  • 1 cup thinly sliced fresh strawberries
  • 1/3 cup strawberry jam

Recipe

  • 1 grease muffin tins or use paper liners.
  • 2 in a large bowl, stir the flour, baking powder, baking soda and salt together and set aside.
  • 3 in another bowl, whisk the sugar, milk, sour cream, oil, egg and orange zest together until well mixed; stir in the strawberries. add to the flour mixture and stir until just combined.
  • 4 preheat oven to 400º. place a spoonful of batter in each prepared tin or paper liner. top each with a scant teaspoon of jam. spoon the remaining batter over the jam, filling each cup about 2/3 full.
  • 5 bake 15 to 18 minutes or until a toothpick inserted in the middle of a muffin comes out clean. cool in the tins for 5 minutes then remove to a rack to cool completely.

Slow Cooker French Toast Casserole

Ingredients

  • 12 slices whole wheat bread
  • 6 eggs
  • 1 teaspoon vanilla
  • 2 cups fat-free evaporated milk
  • 2 tablespoons dark brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Recipe

  • 1 1. spray a 4-quart slow cooker with nonstick spray. layer the bread in the slow cooker.
  • 2 2. in a small bowl, whisk the eggs, vanilla, evaporated milk, brown sugar, cinnamon, and nutmeg. pour over the bread.
  • 3 3. cover and cook on low for 6-8 hours. remove the lid and cook uncovered for 30 minutes or until the liquid has evaporated.

The Ultimate Reese's Peanut Butter Banana Bread

Ingredients

  • 1 1/2 cups softened butter
  • 2 cups sugar
  • 5 eggs
  • 1/2 cup peanut butter
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 8 ounces vanilla pudding mix
  • 2 cups flour
  • 5 -6 ripe bananas
  • 1 (16 ounce) bag peanut butter, minis

Recipe

  • 1 1. preheat oven to 350 degrees f. cream the butter and sugar until smooth. add eggs until smooth. add peanut butter, cinnamon, baking soda, salt, pudding mix and flour until combined. stir in bananas and reeces.
  • 2 2. pour batter into 3 greased bread pans. bake 45-60 minutes or until toothpick comes out clean from center of each loaf. let cool.
  • 3 4. place powdered sugar, milk and peanut butter in a bowl. whisk until smooth and drizzling consistency.
  • 4 5. drizzle over each loaf.

  • 1 combine first five ingredients [to water] over medium heat then add tempeh and bring to simmer. reduce heat to medium low and simmer 20 minutes. remove heat, cover and let cool.

  • 2 in a medium saute pan on medium heat, saute the onions with the olive oil until translucent and slightly browned, 10 to 15 minutes. add the salt and pepper and allow to cool slightly.

  • 3 pour the marinade over the tempeh, make sure all surfaces are covered and place in fridge to marinate for at least 4 hours, preferably overnight.
  • 4 next, make tzatziki- combine all ingredients listed under tzatziki. stir well and also place in fridge to sit for at least 4 hours, preferably overnight.
  • 5 when you are ready to eat, set the tzatziki out to warm slightly while you cook the tempeh.
  • 6 heat a large skillet with 3-4 tbsp olive oil and heat over medium, once heated place tempeh strips in and let them cook until each side is golden brown.

  • 8 then layer your gyro (pita, tzatziki and tempeh) as you choose with lettuce, and/or tomato if you like.

  • 1 preheat slow cooker unit, without the crock, on high.
  • 2 grease slow crock very well and line the bottom with a greased round of parchment paper.

The Ultimate Veggie Burger – Thai Style

  • 225 g firm tofu, finely chopped
  • 1 aubergine (about 250g)
  • 100 g shiitake mushrooms
  • 1 carrot
  • 60 g breadcrumbs (you can make this from about 1-2 slices wholemeal bread)
  • 80 g cashew nuts, very finely chopped
  • 1 egg
  • 1 small onion
  • 2 garlic cloves, peeled, crushed
  • 1 stick lemongrass
  • 1 inch knob ginger
  • 2 small red chilies
  • 1 bunch coriander
  • 2 kaffir lime leaves
  • 2 tablespoons dark soy sauce
  • 2 tablespoons flour
  • salt & freshly ground black pepper
  • vegetable oil (for cooking)
  • sweet chili sauce
  • garlic and lime mayonnaise
  • 1 slice cucumber, onion, tomato (pickled if you like)

Recipe

  • 1 start by very finely chopping the mushrooms and aubergine, so they’re about ½ centimetre cubed. fry them in a wok or pan with a little vegetable and 1 tablespoon of the soy sauce until they are soft all the way through. don’t be tempted to add any more liquid, you need them to be dry so they don’t make the burgers soggy. when they are done, set them aside to cool.
  • 2 prepare all of your other ingredients: finely pound the cashews in a food processor or mortar and pestle – you should have a fine powder with a few lumps for texture. chop the tofu into small pieces about the same size as the aubergines and mushrooms. finely grate the carrot. finely chop the onion, garlic, chilli, coriander, ginger, lemongrass and kaffir lime leaves. take time to do this properly – large chunks won’t be pleasant. the lemongrass and lime leaves are particularly tough and you should chop these as finely as you can. for the chillies, leave the seeds in (finely chopped) if you want them spicy, remove if not.
  • 3 combine all of the burger ingredients into a large bowl and combine with your hands. then divide the mixture into six and form into large patties. it should be a nice firm mixture but if not add a few more breadcrumbs and a bit more flour.
  • 4 heat a frying pan or griddle pan with a little oil over a medium heat and gently place the burgers in the pan. after 3-4 minutes turn over and cook for 3-4 minutes on both sides. turn over again and cook for another 2 minutes on each side.
  • 5 serve in the buns with the sauces and other garnishes.
  • 6 cooking ahead? you can make these a day in advance and keep them in the fridge, or well ahead and freeze, defrosting several hours before cooking.

  • 1/2 cup whole wheat flour

  • 1 tablespoon chopped fresh dill (optional)

Recipe

  • 1 preheat the oven to 400 degrees. place an ungreased 10" diameter castiron skillet in the oven while the oven is preheating.
  • 2 in a medium size bowl combine the flour and whole wheat flour. add the baking powder and salt, stirring well.
  • 3 in a separate bowl, combine the oil, plain yogurt, green onions, dill if using, and black pepper. blend the yogurt mixture into the flour mixture thoroughly to make a soft dough.
  • 4 on a floured cutting board, knead the dough about 5 times and pat into a round loaf. remove castiron skillet from oven and carefully and lightly grease the skillet with butter or oil.
  • 5 place the shaped dough into the castiron skillet, spreading and flattening out the dough to fill up the pan almost to the edges. brush on egg wash or melted butter and bake for about 35-40 minutes or until a knife inserted in the center of the loaf comes out clean.
  • 6 serve warm.

The Ultimate Garden Burger Sandwich

  • 1 original garden burger veggie burger (no substitutes)
  • 2 slices french bread or 2 slices other type crusty bread
  • fat-free mayonnaise or low-fat mayonnaise
  • butter-flavored cooking spray or fat free butter-flavored cooking spray
  • garlic and herb seasoning (i used mccormick's)

Recipe

  • 1 preheat one pan sprayed with vegetable spray for the burger.
  • 2 spray both sides of the burger and place in preheated pan.
  • 3 cook 4 minutes both sides.
  • 4 meanwhile, preheat another pan and spray one side of the bread and sprinkle some garlic and herb seasoning on the one side.
  • 5 once golden brown flip over and spray and season other side.
  • 6 when the burger is still in the pan and after you have flipped it over just before it is done cut it in half.
  • 7 spread some mayo on your bread and place one half of the burger on the other half.
  • 8 you can add lettuce, tomato and whatever you like, (i left it just like this).

  • 2 beat eggs in small bowl at medium high speed until frothy add all remaining ingredients except coconut.
  • 3 beat at medium speed, scraping bowl often, until smooth; stir banana mixture into flour mixture by hand until well mixed.
  • 4 spoon batter into 12 paper-lined or greased muffin cups; sprinkle tops with coconut.
  • 5 bake for 20 to 25 minutes or until wooden pick inserted in center comes out clean; cool on wire rack.
