Strawberry Pecan Bread

Ingredients

• 3 cups flour
• 1 teaspoon salt
• 2 cups sugar
• 1 1/4 cups oil
• 1 teaspoon baking soda
• 1 teaspoon cinnamon
• 4 eggs, beaten
• 2 cups strawberries, sliced
• 1 1/4 cups pecans, chopped

Recipe

• 1 combine the dry ingredients. add eggs, oil, strawberries and pecans. stir just until all ingredients are moistened, may still be a bit lumpy.
• 2 spoon the batter into 2 well-greased 9x5x3-inch loaf pans. bake at 350ºf for 60 to 70 minutes or until toothpick inserted in center comes out clean. cool in pans 5 minutes, the remove and cool completely on wire racks.
