Strawberry Mini Loaf Bread

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • 1/2 cup butter, softened
  • 2/3 cup sugar (or more if for a sweeter bread)
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract or 1 1/2 teaspoons almond extract
  • 1 cup applesauce
  • 2 tablespoons half-and-half cream
  • 2 cups all-purpose flour
  • 1 teaspoon cinnamon (optional)
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups fresh strawberries, coarsely chopped
  • 1/2 cup walnuts

Recipe

  • 1 set oven to 350°f.
  • 2 grease 3 mini loaf pans (you might have to use a fourth pan, depending on how large or small you chop the strawberries, and how many ingredients you are using in the batter).
  • 3 in a bowl mix butter with sugar for about 4 minutes until light and creamy.
  • 4 add in eggs and vanilla; beat well until combined.
  • 5 in a small bowl, combine/whisk the applesauce and half and half; add into the creamed mixture until well combined.
  • 6 in a bowl, stir together flour, baking powder, baking soda and salt.
  • 7 add into the creamed mixture just until blended in (do not over mix!).
  • 8 stir in the chopped or sliced strawberries and walnuts.
  • 9 divide evenly between the mini loaf pans.
  • 10 bake for 30-35 minutes, or until loaves test done.
