Savory Pistachio Mini Loaves

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 1/4 cup olive oil
  • 3/4 cup milk (skim is ok)
  • 2 large eggs
  • 1/3 cup chopped pistachios

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 grease and flour two small loaf pans (i use the small disposable tin foil ones sold in 3-packs for gift giving).
  • 3 in a mixing bowl, whisk oil, milk, and eggs until combined and smooth.
  • 4 in a larger bowl, combine all dry ingredients,except nuts.
  • 5 combine the wet& dry mixtures using a spoon just until combined- just don't overmix or it will toughen the bread.
  • 6 stir in nuts.
  • 7 pour into the prepared pans and bake approximately 20 minutes, or until a toothpick comes out clean.
  • 8 let cool on a wire rack.
