Savory Pistachio Mini Loaves

Ingredients
- 1 1/2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1 tablespoon granulated sugar
- 1/2 teaspoon salt
- 1/4 cup olive oil
- 3/4 cup milk (skim is ok)
- 2 large eggs
- 1/3 cup chopped pistachios
Recipe
- 1 preheat oven to 350 degrees f.
- 2 grease and flour two small loaf pans (i use the small disposable tin foil ones sold in 3-packs for gift giving).
- 3 in a mixing bowl, whisk oil, milk, and eggs until combined and smooth.
- 4 in a larger bowl, combine all dry ingredients,except nuts.
- 5 combine the wet& dry mixtures using a spoon just until combined- just don't overmix or it will toughen the bread.
- 6 stir in nuts.
- 7 pour into the prepared pans and bake approximately 20 minutes, or until a toothpick comes out clean.
- 8 let cool on a wire rack.
