Spinach Madeline

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 2 packages chopped spinach
  • 4 tablespoons butter
  • 2 tablespoons flour
  • 1 medium onion, chopped
  • 2 -4 cloves garlic, minced
  • 1/2 cup evaporated milk
  • 1/2 teaspoon pepper
  • 3/4 teaspoon celery salt
  • 6 ounces jalapeno jack cheese, cut into small cubes
  • 1 teaspoon worcestershire sauce

Recipe

  • 1 cook spinach according to directions.
  • 2 drain and keep liquid.
  • 3 melt butter in saucepan over low heat.
  • 4 add onion and garlic and cook until soft but not brown.
  • 5 add flour, stirring while blending.
  • 6 add 1/2 cup reserved spinach liquid and evaporated milk, stirring constantly to avoid lumps.
  • 7 cook until smooth and thick.
  • 8 continue stirring.
  • 9 add pepper, celery salt and cheese.
  • 10 stir some more till melted.
  • 11 combine with cooked spinach.
  • 12 top with buttered bread crumbs if desired.
