Scalloped Pineapple Casserole

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 3/4 cup butter
  • 1 cup sugar
  • 3 eggs
  • 1 (20 ounce) can crushed pineapple, well drained
  • 1 1/2 teaspoons lemon juice
  • 1 cup grated cheddar cheese
  • 4 cups cubed bread (crusts removed)

Recipe

  • 1 in mixing bowl, cream butter and sugar.
  • 2 add eggs, one at a time, mixing well after each addition.
  • 3 stir in pineapple, cheese and lemon juice (will look broken from the lemon juice).
  • 4 fold in bread cubes.
  • 5 place in buttered 2 qt baking dish.
  • 6 bake uncovered at 350 for 40-45 minutes until top is light golden brown.
  • 7 serve warm.
