Scalloped Pineapple Casserole

Ingredients

- 3/4 cup butter
- 1 cup sugar
- 3 eggs
- 1 (20 ounce) can crushed pineapple, well drained
- 1 1/2 teaspoons lemon juice
- 1 cup grated cheddar cheese
- 4 cups cubed bread (crusts removed)
Recipe
- 1 in mixing bowl, cream butter and sugar.
- 2 add eggs, one at a time, mixing well after each addition.
- 3 stir in pineapple, cheese and lemon juice (will look broken from the lemon juice).
- 4 fold in bread cubes.
- 5 place in buttered 2 qt baking dish.
- 6 bake uncovered at 350 for 40-45 minutes until top is light golden brown.
- 7 serve warm.
