Spanish Tomato And Garlic Bread

Ingredients

  • 4 large ripe tomatoes, roughly chopped
  • 2 garlic cloves, roughly chopped
  • 1/4 teaspoon sea salt
  • 1/2 lemon, juice and zest of, grated
  • 1 teaspoon soft brown sugar
  • 1 loaf flat bread, such as ciabatta
  • 2 tablespoons olive oil
  • ground black pepper

Recipe

  • 1 preheat oven to 400°f
  • 2 place tomatoes, garlic, salt, lemon rind, and brown sugar in a small pan.
  • 3 cover and cook gently for 5 minutes until the tomatoes have released their juices. split the loaf in half horizontally, then cut each half width ways into 2-3 pieces, so that you have 4-6 flat pieces.
