Spinach Salad With Bacon And Croutons

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 4 slices bacon, cut up
  • 2 slices sandwich bread, torn into 1-inch pieces
  • kosher salt
  • fresh ground black pepper
  • 5 ounces baby spinach
  • 1/2 cucumber, sliced
  • 1/2 cup buttermilk
  • 1/4 cup mayonnaise
  • 2 tablespoons fresh herbs, chopped (such as chives, parsley, and dill)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon fresh ground black pepper

Recipe

  • 1 preheat oven to 400 degrees f; toss bacon pieces with bread pieces on a rimmed baking sheet and season with salt and pepper.
  • 2 bake until bacon is crisp, about 10 to 12 minutes; let cool.
  • 3 in a serving bowl, toss spinach, cucumber, bacon and croutons.
  • 4 whisk together dressing ingredients or place in a lidded glass jar and shake to combine.
  • 5 drizzle salad with 6 tablespoons of dressing and toss well.
