Spinach Salad With Bacon And Croutons

Ingredients

- 4 slices bacon, cut up
- 2 slices sandwich bread, torn into 1-inch pieces
- kosher salt
- fresh ground black pepper
- 5 ounces baby spinach
- 1/2 cucumber, sliced
- 1/2 cup buttermilk
- 1/4 cup mayonnaise
- 2 tablespoons fresh herbs, chopped (such as chives, parsley, and dill)
- 1/2 teaspoon kosher salt
- 1/4 teaspoon fresh ground black pepper
Recipe
- 1 preheat oven to 400 degrees f; toss bacon pieces with bread pieces on a rimmed baking sheet and season with salt and pepper.
- 2 bake until bacon is crisp, about 10 to 12 minutes; let cool.
- 3 in a serving bowl, toss spinach, cucumber, bacon and croutons.
- 4 whisk together dressing ingredients or place in a lidded glass jar and shake to combine.
- 5 drizzle salad with 6 tablespoons of dressing and toss well.
