Strawberry Nut Bread

Total Time: 1 hr 45 mins Preparation Time: 30 mins Cook Time: 1 hr 15 mins

Ingredients

  • 20 ounces frozen strawberries, thawed, reserve liquid (if mixture looks dry, add some liquid)
  • 4 extra large eggs
  • 1 cup vegetable oil
  • 3 cups all-purpose flour
  • 2 cups sugar (can mix brown and )
  • 3 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup chopped walnuts
  • 3/4 cup raisins

Recipe

  • 1 combine and stir the strawberries, eggs and oil.
  • 2 sift the dry ingredients together.
  • 3 add the wet ingredients to the dry and stir to blend. (if the mixture is too dry, add some of the reserved liquid).
  • 4 stir in the nuts and raisins.
  • 5 pour into a large, greased and floured tube pan. bake in a 350f oven for 1 to 1 1/4 hours or until a tester comes out clean.
  • 6 cool on a rack. cut the bread when it is cool-the following day is fine.
