Super Summer Sandwich

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 6
  • 1 teaspoon butter, spread
  • 3 tablespoons all-purpose flour
  • 1 1/2 cups skim milk
  • 1 cup shredded 2% sharp cheddar cheese
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 6 slices thick whole wheat bread
  • 12 ounces thinly sliced low-sodium turkey breast (like healthy choice)
  • 6 ounces thinly sliced low-sodium ham (like healthy choice)
  • 12 slices tomatoes
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika

Recipe

  • 1 to make the cheese sauce, melt butter in small saucepan over medium heat.
  • 2 stir in flour; gradually add milk, stirring with a whisk.
  • 3 cook until thick (about 10 minutes); stirring constantly.
  • 4 remove from heat; add cheese, stirring until cheese melts.
  • 5 stir in remaining ingredients.
  • 6 preheat broiler.
  • 7 arrange toast in baking dish.
  • 8 top each toast slice with 2 ounces turkey, 1 ounce ham, and sprinkle with pepper.
  • 9 broil until lightly browned.
  • 10 remove from oven.
  • 11 add two slices of tomato to each piece of toast, and top with warm cheddar cheese sauce (see below).
  • 12 sprinkle with paprika (and additional pepper, if desired) and serve warm.
