Test Recipe: Tofu And Bean Muffins

Ingredients
- 1/2 cup splenda granular
- 2 tablespoons egg whites
- 1/4 teaspoon vanilla extract
- 1/2 cup adzuki beans
- 1/2 cup unsweetened vanilla almond breeze
- 6 ounces mori-nu extra firm lite tofu
- 1 tablespoon baking powder
- 1 cup whole wheat flour
- 2 tablespoons unsweetened dried shredded coconut
Recipe
- 1 put tofu and almond milk in blender or food processor.
- 2 add vanilla, beans and egg , blend till incoporated.
- 3 pour in large mixing bowl.
- 4 sift dry (minus coconut) into wet and fold till incorporated.
- 5 spoon into muffin tin, greased.
- 6 sprinkle with coconut.
- 7 bake at 400 for 20 minutes.
