Test Recipe: Tofu And Bean Muffins

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 1/2 cup splenda granular
  • 2 tablespoons egg whites
  • 1/4 teaspoon vanilla extract
  • 1/2 cup adzuki beans
  • 1/2 cup unsweetened vanilla almond breeze
  • 6 ounces mori-nu extra firm lite tofu
  • 1 tablespoon baking powder
  • 1 cup whole wheat flour
  • 2 tablespoons unsweetened dried shredded coconut

Recipe

  • 1 put tofu and almond milk in blender or food processor.
  • 2 add vanilla, beans and egg , blend till incoporated.
  • 3 pour in large mixing bowl.
  • 4 sift dry (minus coconut) into wet and fold till incorporated.
  • 5 spoon into muffin tin, greased.
  • 6 sprinkle with coconut.
  • 7 bake at 400 for 20 minutes.
