Sunday Sausage Strata

Ingredients

- 1/2 lb turkey breakfast sausage, casing removed
- 2 medium onions, chopped (2 cups)
- 1 medium red bell pepper, seeded and diced (1 1/2 cups)
- 12 large eggs
- 4 cups 1% low-fat milk
- 1 teaspoon salt, to taste
- fresh ground pepper
- 6 cups cubed whole wheat country bread (crusts removed, about 7 slices)
- 1 tablespoon dijon mustard
- 1 1/2 cups grated swiss cheese
Recipe
- 1 coat a 13 x 9 inch baking with cooking spray.
- 2 cook sausage in a large nonstick skillet over medium heat, crumbling with a wooden spoon, until lightly browned, about 3-4 minutes.
- 3 transfer to a plate lined with paper towels to drain.
- 4 add onion and bell pepper to the skillet; cook, stirring often, until softened, 3-4 minutes.
- 5 whisk eggs, milk, salt, and pepper in a bowl, until blended.
