Texas Iron Skillet Cornbread

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 1 cup cornmeal (stoneground preferred)
  • 1 cup buttermilk
  • 1 egg, beaten
  • 1 tablespoon shortening
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt

Recipe

  • 1 preheat oven to 450 degrees.
  • 2 mix all ingredients together.
  • 3 pour into a pre-heated, oiled or greased 8-9" iron skillet.
  • 4 bake for 20 minutes.
  • 5 add corn, jalapenos, bacon, etc. for variety.
  • 6 pouring the batter into the hot skillet gives it a crisp crust.
