Salmon Loaf With Cucumber Sauce

Ingredients

- 1 (16 ounce) can salmon
- 2 egg whites
- 2 tablespoons minced onions
- 1/2 cup chopped celery
- 2 tablespoons minced green bell peppers
- 2 tablespoons minced chives
- 1 tablespoon chopped fresh dill
- 1 cup breadcrumbs
- 1 tablespoon lemon juice
- 1/2 cup plain yogurt
- 2/3 cup seeded finely chopped cucumber
- 1 teaspoon dried dill
Recipe
- 1 mix all ingredients of cucumber sauce together and refrigerate until ready to serve.
- 2 drain salmon, reserving juice; discard skin and bones. add water to salmon juice to make ½ cup.
- 3 combine liquid, salmon and remaining ingredients in large bowl. spoon into a greased loaf pan. bake at 350 for 30-40 minutes. serve with cucumber sauce.
