Salmon Loaf With Cucumber Sauce

Ingredients

  • Servings: 6
  • 1 (16 ounce) can salmon
  • 2 egg whites
  • 2 tablespoons minced onions
  • 1/2 cup chopped celery
  • 2 tablespoons minced green bell peppers
  • 2 tablespoons minced chives
  • 1 tablespoon chopped fresh dill
  • 1 cup breadcrumbs
  • 1 tablespoon lemon juice
  • 1/2 cup plain yogurt
  • 2/3 cup seeded finely chopped cucumber
  • 1 teaspoon dried dill

Recipe

  • 1 mix all ingredients of cucumber sauce together and refrigerate until ready to serve.
  • 2 drain salmon, reserving juice; discard skin and bones. add water to salmon juice to make ½ cup.
  • 3 combine liquid, salmon and remaining ingredients in large bowl. spoon into a greased loaf pan. bake at 350 for 30-40 minutes. serve with cucumber sauce.
