Scalloped Pineapple

Ingredients

- 1/2 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 4 egg whites
- 2 (20 ounce) cans unsweetened crushed canned pineapple, undrained
- 1/2 cup nonfat milk
- 8 cups whole grain bread, cubed
Recipe
- 1 preheat oven to 350 degrees f & coat the inside of a 13"x9" baking dish with cooking spray.
- 2 in a large bowl, for about 2 minutes beat together the butter & sugar until crumbly, then add eggs & egg whites, one at a time, beating well after each addition.
- 3 stir in pineapple & milk, then add the bread cubes & toss to coat.
- 4 transfer entire mixture to the prepared baking dish & bake, uncovered, for 50-55 minutes or until bread cubes are toasted lightly.
- 5 serve warm, then cover & refrigerate leftovers.
