Scalloped Pineapple

Total Time: 1 hr 5 mins Preparation Time: 10 mins Cook Time: 55 mins

Ingredients

  • Servings: 12
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 4 egg whites
  • 2 (20 ounce) cans unsweetened crushed canned pineapple, undrained
  • 1/2 cup nonfat milk
  • 8 cups whole grain bread, cubed

Recipe

  • 1 preheat oven to 350 degrees f & coat the inside of a 13"x9" baking dish with cooking spray.
  • 2 in a large bowl, for about 2 minutes beat together the butter & sugar until crumbly, then add eggs & egg whites, one at a time, beating well after each addition.
  • 3 stir in pineapple & milk, then add the bread cubes & toss to coat.
  • 4 transfer entire mixture to the prepared baking dish & bake, uncovered, for 50-55 minutes or until bread cubes are toasted lightly.
  • 5 serve warm, then cover & refrigerate leftovers.
