Smoky Potato Bake

Total Time: 55 mins Preparation Time: 25 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 2 lbs medium potatoes
  • 2 tablespoons breadcrumbs
  • 8 ounces smoked bacon
  • 5 1/2 ounces butter
  • 1 lb cottage cheese
  • salt
  • pepper

Recipe

  • 1 preheat oven to 350*.
  • 2 boil potatoes until tender.
  • 3 when cool, peel and slice.
  • 4 sprinkle a deep well-greased oven proof dish with some bread crumbs.
  • 5 place a layer of potatoes on top.
  • 6 chop bacon and fry until crisp.
  • 7 scatter half the bacon on top of the potatoes in the dish.
  • 8 melt butter and cheese in saucepan, over a low heat.
  • 9 pour half of this mixture over the bacon and potatoes.
  • 10 add another layer of potatoes, then bacon.
  • 11 pour the remaining cheese mixture over the previous layer.
  • 12 season with salt and pepper to taste.
  • 13 sprinkle the remaning breadcrumbs on top and dot wit butter
  • 14 bake in oven uncovered for 30 minutes or until light brown.
