Smoky Potato Bake

Ingredients

- 2 lbs medium potatoes
- 2 tablespoons breadcrumbs
- 8 ounces smoked bacon
- 5 1/2 ounces butter
- 1 lb cottage cheese
- salt
- pepper
Recipe
- 1 preheat oven to 350*.
- 2 boil potatoes until tender.
- 3 when cool, peel and slice.
- 4 sprinkle a deep well-greased oven proof dish with some bread crumbs.
- 5 place a layer of potatoes on top.
- 6 chop bacon and fry until crisp.
- 7 scatter half the bacon on top of the potatoes in the dish.
- 8 melt butter and cheese in saucepan, over a low heat.
- 9 pour half of this mixture over the bacon and potatoes.
- 10 add another layer of potatoes, then bacon.
- 11 pour the remaining cheese mixture over the previous layer.
- 12 season with salt and pepper to taste.
- 13 sprinkle the remaning breadcrumbs on top and dot wit butter
- 14 bake in oven uncovered for 30 minutes or until light brown.
