Tempeh Reuben Sandwich

Ingredients
- Servings: 4
- 8 ounces tempeh
- 3/8 cup nutritional yeast flakes
- 1/8 cup whole wheat pastry flour
- 1/4 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 cup water
- 1/3 cup soybean oil
- 1/8 teaspoon horseradish
- 1/4 tablespoon prepared mustard
- 3/8 cup sauerkraut
Recipe
- 1 mix dry ingredients in a saucepan.
- 2 add water slowly, whisking to avoid lumps.
- 3 heat gently over a low to medium flame, whisking constantly until thick and creamy.
- 4 remove from heat and whisk in oil, horseradish and mustard.
- 5 to make the sandwich, spread one slice of dark bread with your favorite mayo, then layer with ¼ cake of crisply fried tempeh, 3 tablespoons warm sauerkraut, and ¼ cup of the sauce prepared above.
- 6 top with another slice of dark bread and enjoy!
