Tempeh Reuben Sandwich

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 8 ounces tempeh
  • 3/8 cup nutritional yeast flakes
  • 1/8 cup whole wheat pastry flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 cup water
  • 1/3 cup soybean oil
  • 1/8 teaspoon horseradish
  • 1/4 tablespoon prepared mustard
  • 3/8 cup sauerkraut

Recipe

  • 1 mix dry ingredients in a saucepan.
  • 2 add water slowly, whisking to avoid lumps.
  • 3 heat gently over a low to medium flame, whisking constantly until thick and creamy.
  • 4 remove from heat and whisk in oil, horseradish and mustard.
  • 5 to make the sandwich, spread one slice of dark bread with your favorite mayo, then layer with ¼ cake of crisply fried tempeh, 3 tablespoons warm sauerkraut, and ¼ cup of the sauce prepared above.
  • 6 top with another slice of dark bread and enjoy!
