Steak & Potato Sandwiches

Ingredients

  • Servings: 4
  • 3 tablespoons fresh lime juice
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons ground cumin
  • 2 teaspoons olive oil
  • 1 teaspoon dijon mustard
  • 1/2 lb flank steak, trimmed of all visible fat
  • 1/4 teaspoon salt
  • 1/8 teaspoon fresh ground pepper
  • 4 small red potatoes, cooked and sliced
  • 1 red bell pepper, seeded and sliced
  • 3 scallions, sliced
  • 4 large salsa-flavored pita bread, halved
