Turkey Scallopini

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 6 turkey breast, slices about 1 1/2 pounds
  • 1/4 cup all-purpose flour
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 egg
  • 2 tablespoons water
  • 1 cup soft breadcrumbs
  • 1/2 cup parmesan cheese, grated
  • 1/4 cup butter or 1/4 cup margarine
  • 3 tablespoons parsley, fresh minced (or more)

Recipe

  • 1 melt butter in skillet over medium high heat.
  • 2 pound turkey to 1/4 inch thickness.
  • 3 in a shallow bowl, flour, salt,and pepper.
  • 4 in another bowl beat egg and water.
  • 5 on a plate, combine bread crumbs with parmesan cheese.
  • 6 dredge turkey in flour.
  • 7 dip in egg.
  • 8 then coat with bread crumbs.
  • 9 fry turkey slices in butter until done and golden brown, about 7 minutes (depending on thickness).
