Turkey Scaloppine With Parmesan Cheese

Total Time: 21 mins Preparation Time: 15 mins Cook Time: 6 mins

Ingredients

  • Servings: 4
  • 12 ounces turkey breast, in 4 slices 3 oz each,about 1/4 inch thick
  • 1/4 cup flour
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 egg
  • 2 tablespoons water
  • 1 cup fresh breadcrumb
  • 1/2 cup freshly grated parmesan cheese
  • 1/4 cup butter
  • snipped parsley

Recipe

  • 1 rinse turkey slices and pat dry.
  • 2 stir together flour, salt and pepper in a shallow bowl.
  • 3 in another shallow bowl beat the egg with the water.
  • 4 in another shallow bowl mix the cheese and the bread crumbs.
  • 5 dip each turkey slice in the flour, then the egg then the bread crumbs.
  • 6 in a 12 inch skillet melt butter over med-high heat.
  • 7 add coated turkey slices and cook 2-3 minutes per side or until no longer pink.
  • 8 move to serving platter and garnish with parsley.
