Turkey Stuffed Bell Peppers

Total Time: 1 hr 10 mins Preparation Time: 30 mins Cook Time: 40 mins

Ingredients

  • 8 green peppers
  • 1 lb ground turkey
  • 1/2 cup mild cheddar cheese, shredded (low-fat)
  • 1/2 cup onion, chopped
  • 1 1/2 cups breadcrumbs
  • 2 tomatoes, chopped
  • 1/2 teaspoon worcestershire sauce
  • 1/2 cup mild cheddar cheese, shredded (low-fat, for topping)

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 cut tops off green peppers as evenly possible, clean and deseed.
  • 3 dunk green peppers into boiling and leave for 5 minutes or until the peppers begin to get tender.
  • 4 remove peppers and tip upside down on a towel so the excess water runs out but the inside stays moist.
  • 5 place peppers in baking dish.
  • 6 lightly coat the inside of the pepper with salt (optional).
  • 7 cover dish.
  • 8 brown and drain the ground turkey and onions.
  • 9 mix turkey, cheddar cheese, breadcrumbs, tomatoes, and worcestershire sauce.
  • 10 place even amounts of the turkey mixture into peppers.
  • 11 top peppers with remaining cheese.
  • 12 cover dish and cook for 25 minutes.
  • 13 remove cover and cook for 5-10 minutes or until the cheese begins to brown (which ever comes first) and serve.
