Strawberry Cinnamon Cornbread

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 16
  • 1 cup unbleached flour
  • 1 cup cornmeal
  • 1/4 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg, plus
  • 2 egg yolks
  • 10 ounces strawberry yogurt (or whichever flavor you prefer)
  • 1/4 teaspoon cinnamon
  • 1/2 cup raisins (or whichever dried fruit you prefer)

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 mix dry ingredients in a large bowl.
  • 3 beat eggs.
  • 4 mix egg, yolks, yogurt, cinnamon, raisins, and stir until combined.
  • 5 stir wet ingredients into dry ingredients.
  • 6 pour or scoop batter into a greased (or coated with cooking spray) 9 x 9 pan and bake for 20 minutes.
  • 7 eat until gone.
  • 8 repeat steps 1-7.
