Strawberry Cinnamon Cornbread

Ingredients

- 1 cup unbleached flour
- 1 cup cornmeal
- 1/4 cup sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg, plus
- 2 egg yolks
- 10 ounces strawberry yogurt (or whichever flavor you prefer)
- 1/4 teaspoon cinnamon
- 1/2 cup raisins (or whichever dried fruit you prefer)
Recipe
- 1 preheat oven to 400 degrees.
- 2 mix dry ingredients in a large bowl.
- 3 beat eggs.
- 4 mix egg, yolks, yogurt, cinnamon, raisins, and stir until combined.
- 5 stir wet ingredients into dry ingredients.
- 6 pour or scoop batter into a greased (or coated with cooking spray) 9 x 9 pan and bake for 20 minutes.
- 7 eat until gone.
- 8 repeat steps 1-7.
